Easy Taco Casserole
We LOVE tacos! I don’t know anyone who doesn’t, actually. Many of us aren’t picky about how we eat them but sometimes you wanna mix things up. That’s all I did here. I wanted something creamy, cheesy and easy – so we made a casserole!
Layered Taco Bake
Sometimes it’s just easier to toss everything into a dish and bake it off, am I right? No need to build a taco, just bake everything and then scoop it up. I like this recipe because we are layering everything, lasagna-like, and in less than 30 minutes, you’ve got yourself a delicious meal.
Easy Taco Bake Recipe
After browning your ground meat (we used ground turkey), add some canned tomatoes, taco seasoning, beans and corn. Using tortillas, we then layered the meat sauce with a creamy salsa, and lots of cheese. Then bake it to melty goodness, and finished it off with our favorite toppings.
Toppings for Taco Casserole
Any of your favorite taco toppings will work for this recipe, too! Here are some ideas:

When we have tacos or burritos, etc. there are so many things to have with them! Here are some ideas for you:

Taco Bake
An easy taco bake recipe! All your favorite taco fixin's layered with tortillas and cheese; the perfect casserole meal for your family!
Ingredients
- 4 8" Tortillas
- 1 lb Ground Turkey, Chicken, or Beef
- 1 packet Taco Seasoning
- 1 cup Black Beans, drained and rinsed
- 1 cup Canned or Frozen Corn, if using canned, drain.
- 1 14oz can Diced Tomatoes, drained
- 3 oz Cream Cheese, softened
- 1/2 cup Salsa
- 1 cup Shredded Cheese, cheddar, Monterey Jack, Pepper Jack, etc.
- Optional toppings, Shredded lettuce, diced jalapenos, sliced black olives, tomatoes, sour cream, tomatoes, guacamole, etc.
Instructions
- Preheat oven to 400 degrees.
- In a small bowl, mix together softened cream cheese and salsa together until creamy; set aside.
- In a skillet, brown ground meat, then add the taco seasoning following instructions on the back of the packet.
- Add the tomatoes, black beans and corn. Heat through then remove from heat.
- Spray a pie plate or baking dish with nonstick spray.
- Place a tortilla on the bottom of the pie pan and cover it with about 1 cup of the meat mixture.
- Next top the meat mixture with 1/3 of the cream cheese/salsa mixture, then 1/3 of the cheese.
- Add another tortilla and continue building, finishing with tortilla and cheese.
- Bake until bubbly or the cheese browns - about 20 minutes.
- Let cool for about 10 minutes before slicing.
- Top with your favorite ingredients.

Didn't have cream cheese, substituted Greek yogurt and substituted turkey for chicken (doesn't change the flavor much). Turned out great, can't wait to try it with the cream cheese!!

Girl this is going in my next meal plan rotation!! That looks amazing!! I have noticed since we have started eating healthier I make a lot of Mexican dishes!! Looks dee-lish, and its easy, and it has things in it I have heard of!!
