Easy Instant Pot Taco Chicken

You can whip up this easy Instant Pot Mexican chicken in 30 minutes and with just a few ingredients. Use it for all of your favorite taco and salad recipes!

I was hungry for tacos and looking for something a little different so I decided to pull out my Instant Pot so that I didn’t have to stand over a hot pan.

I just set it and forget it!  My favorite kind of cooking! These are the easiest shredded chicken tacos.

I think one of my favorite things about the Instant Pot is the saute feature – it’s the little things, I know.

It saves having to dirty yet another pan for searing items like roasts, or sautéing onions and other veggies, and browning ground meat for soups and chili. 

You can do it all in the Instant Pot – ONE POT COOKING!  It really is very versatile.  I use it quite a bit, but I know that I could be using it for so many other things, so be on the lookout for some more Instant Pot recipes!

How To Make Taco Chicken

This super simple Taco Chicken recipe was my answer to a quick and easy meal, just toss everything in, and you’ll have delicious chicken ready for eating in only 30 minutes! 

Use it for tacos, salads, pizza – whatever you fancy!  I wanted something to go with the Mexican Street Corn I made so we decided to have tacos using some crunchy Boston lettuce.

Today, we’re making chicken tacos with taco seasoning.

Easy Instant Pot Taco Chicken Recipe

Prep Time: 5 minutes
Cook Time: 15 minutes
Total Time: 20 minutes

Easy and delicious shredded chicken for tacos, burritos, salads and more!  Dinner in less than 30 minutes and only a few ingredients!

Ingredients

  • 1 lb Boneless chicken breast
  • 1 T Ranch mix, from packet
  • 1 T Taco seasoning
  • 1 T Olive oil
  • 1 T Vinegar, any kind will do
  • 1/2 cup Chicken broth
  • 2 T Cream cheese, optional, but adds so much flavor

Instructions

  1. To save even more time, I like to get my Instant Pot heated up quickly, so while you're mixing up the ingredients, choose the sauté function and let it get hot
  2. In a small bowl, mix together the Ranch seasoning, taco seasoning, olive oil, vinegar and chicken broth
  3. Place the chicken in the bottom of the Instant Pot, and add the sauce mixture and place the cover on and close, making sure your vent is set to sealed
  4. Choose the High Pressure Cooker setting, and set the time to 15 minutes
  5. When it's done cooking, let the Instant Pot naturally release for about 10 minutes, if the pressure pin is still up, carefully nudge the vent lever to release until the pressure pin drops, then open and remove the lid
  6. Using two forks, or your best method for shredding chicken, shred away!  If you prefer less liquid, you can set your Instant Pot to sauté again and let the liquid evaporate (takes only about 5 minutes)
  7. At this point, I like to add the cream cheese and mix it into the chicken
  8. Choose your favorite method of delivery and assorted toppings and enjoy!
  9. Slow Cooker Method:  If you do not have an Instant Pot, you can easily make this in your slow cooker.  Just add all of the ingredients (except the cream cheese) at one time, set the temp to low and cook for 4-6 hours. After you've shredded the chicken, stir in the cream cheese
