The Best Sunday Dinner Recipe

This is one of those meals that is perfect for Sunday supper or any weekday because it’s ready in such a short amount of time.

The combination of the warm and hearty stew topped with delicious, delicate buttermilk dumplings is perfect for a chilly day. It’s a snowy Sunday here in New Hampshire and I just had to make this bowl of comfort.

Easy Homestyle Chicken and Dumplings

My Easy Homestyle Chicken and Dumplings came together because I had some leftover Easy Instant Pot Bone Broth and I wanted to use some of my homemade Cream of Chicken Condensed Soup – this recipe called for both.

I loved that I was able to incorporate both of these ingredients into this dish. Didn’t have the time to make these?

NO worries, friends, I promise this will turn out just as delicious with canned!

Ingredients in Chicken and Dumplings

At first it might seem like a lot of ingredients but it’s really a lot of simple items that you likely have on hand.

Here’s all you’ll need: butter, olive oil, celery, carrots, onions, (optional green beans, you can also use peas), garlic powder, salt, black pepper, poultry seasoning, dried thyme, chicken broth, cream of chicken (or celery, or mushroom, etc.) soup, milk, all-purpose flour, baking powder, sugar, and buttermilk (make your own with milk and white vinegar).

Other items you’ll need: large soup pot with lid, or Dutch oven, glass bowl, and a ladle!

Ingredients

For the stew:

  • 1 Tbsp butter
  • 1 Tbsp extra virgin olive oil
  • 2 med carrots, chopped
  • 2 stalks celery, chopped
  • ½ cup onion, chopped
  • 1 cup fresh green beans
  • 2 large garlic cloves, minced
  • 1 ½ tsp sea salt
  • Fresh ground pepper to taste
  • 1 tsp poultry seasoning
  • ½ tsp dried thyme leaves
  • 8 oz chopped cooked chicken or turkey
  • 4 cups chicken broth
  • 1 can cream of chicken soup, feel free to use any kind of “cream of”…
  • 1 cup milk

For the Dumplings:

  • 1 cup all purpose flour
  • 2 tsp baking powder
  • 1 tsp sugar
  • 1/2 tsp sea salt
  • 1 Tbsp melted butter
  • 1/2 cup buttermilk, or 1/2 cup milk with 1 1/2 tsp white vinegar or lemon juice
  • 1 tsp garlic seasoning

Instructions

Make the Stew:

  1. In a large soup pot or Dutch oven on medium/high heat, add butter and olive oil.
  2. Once hot, add the veggies and saute until the onions are beginning to soften and turn translucent - about 5 minutes.
  3. Add the garlic and cook for about 30 seconds - until you can smell the garlic.
  4. Add the rest of the seasonings and chicken - stir.
  5. Add the broth, soup, and milk and stir well.
  6. Reduce heat to medium/low and let simmer for about 15 minutes, stirring occasionally.

Make the Dumplings:

  1. In a medium bowl, add melted butter, and the rest of the dumpling ingredients.  Mix just until moistened - don't overmix.
  2. You’ll want it to look like a sticky paste. If it's too dry, just add a little bit of milk at a time until it's the right consistency.
  3. Turn the heat up on the stew to med.
  4. Then drop the dough by spoonful’s into the pot.
  5. Sometimes I have more dough than space on top of the stew, if it's the same for you, just push some of them down into the broth - yum!
  6. Put the lid on the pot and WALK AWAY! Let simmer for  about 10 minutes - Resist the urge to peek!
  7. The dumplings will look drier on the top and that's when you know they're done.
  8. Remove from heat and serve!
