I don’t know about you, but I am not a fan of using multiple bowls when I am baking. I understand that sometimes you need to, but this is not one of those times. SO grab your big bowl and let’s get to it.

How to Make Banana Peanut Butter Chocolate Chip Muffins

All you need are a few simple ingredients:

  • Brown/Ripe bananas
  • Creamy Peanut Butter (you could also use crunchy!)
  • Chocolate Chips ((walnuts, pecans, whatever you like!)
  • Flour – whole wheat, all purpose, or a mixture of both
  • Baking soda and powder, salt
  • Vanilla extract
  • Egg
  • Sour Cream (or yogurt)
  • Maple Syrup

Combine the wet ingredients, add the dry, mix and spoon into muffin tin, then bake!

Can I Use Natural Peanut Butter or Another Nut Butter (Almond, Cashew)?

Yes! Any kind of nut butter will do! So whatever you have on hand is perfect.

Can I Make These Non-Dairy?

Sure can! Replace milk and sour cream with non-dairy options like almond, oat, coconut, soy. Same measurements – still moist and delicious!!

If you are a fan of those dome-y muffin tops, these are just like the fluffy muffins you get in your favorite bakery – and the secret is the baking temp!

You’ll start the muffins at a high temp for a few minutes and then lower the temp for the rest of the cooking time. This produces those beautiful bakery-style muffins!

Ingredients

  • 2 large bananas, ripe
  • 1/2 cup maple syrup
  • 1 egg
  • 1/2 cup sour cream or yogurt
  • 1/3 cup milk
  • 1/2 cup creamy peanut butter
  • 1 Tbsp vanilla extract
  • 1 cup whole wheat flour
  • 3/4 cup all purpose flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp salt
  • 1/2 cup chocolate chips

Instructions

  1. Preheat oven to 425F (this high heat at the beginning helps to make those beautiful domed tops!) and line a muffin tin with holders or spray with nonstick spray
  2. In a large bowl, mash bananas then add in the rest of the wet ingredients: maple syrup, sour cream, milk, egg, vanilla extract. Mix/whisk until smooth.
  3. Add the peanut butter, then mix again until smooth.
  4. Using a wire strainer, add the dry ingredients: both flours, powder, soda, cinnamon and salt then shake into the wet ingredients.
  5. Add the chocolate chips and stir JUST until the dry ingredients are incorporated - don't over mix.
  6. With a spoon or ice cream scoop, spoon the mix into the muffin cups filling to top. Top with more chocolate chips if you choose.
  7. Bake for 5 minutes THEN reduce the heat to 350 and bake for 10-12 more minutes. The muffins should have a nice dome and look dry to the touch.
  8. Remove from the oven and place muffin tin on a cooling rack for about 5 minutes.
  9. Remove muffins from tin and cool on the rack.
  10. Serve warm with butter, or more peanut butter!
  11. Muffins will keep at room temp for about 3 days.
  12. Freeze for 3 months.

Notes

Non Dairy - replace milk and sour cream with any non-dairy milk and yogurt of your choice - almond, coconut, soy, oat...

Flour - you can use All purpose if you don't have whole wheat.

Add nuts, or even peanut butter chips instead of chocolate chips.
