Last week I had this pile of brown bananas and really, what can you do with them besides make some sort of bread or muffin??
I’ve always got old brown bananas hanging around for these types of recipes, am I the only one??
Iβm not naturally a bakerβ¦so I really needed to search the Internet for some assistance and I came across a blog called Honest Fare where I found some inspiration for these banana chocolate muffins.
Chocolate Banana Muffins
The combination of chocolate and banana in these muffins is so perfect. The chocolate is actually a little surprise when you bite into the middle and and the kids just love them!
Flourless Banana Muffins
That’s right, no wheat flour in this recipe, you’ll use almond flour instead and it gives the muffins a heartiness that will keep you full all morning!
There’s also no refined sugar, we are using honey for sweetness.
Can You Freeze Banana Muffins?
These banana chocolate muffins freeze great – just seal them in a freezer zip bag and they’ll keep for up to a month. To thaw, just take them out the night before and place them on your counter.
Banana Chocolate Muffins Recipe
A flourless version of your favorite muffins and the perfect option for breakfast or snacks!
Ingredients
- 2 1/2 cups almond flour
- 1 tsp baking powder
- 1 tsp cinnamon
- 2 eggs
- 1/4 cup honey
- 3 Β½ medium-sized ripe bananas, peeled (youβll want these to be brownishβ¦3 bananas for the recipe and the other Β½ for the tops of the muffins)
- 2 T cocoa powder
- 1/4 sliced almonds
- Coarse salt, for topping
Instructions
- Preheat your oven to 300 degrees.
- Grease and almond flour* a 12-cup muffin tin. I used coconut oil to grease.
- *Be sure that you get enough into the nooks and crannies of the tins; I had some issues with sticking.
- In a large bowl, whisk the almond flour, baking soda, and cinnamon together.
- In a separate bowl, add eggs, banana, and honey and beat with a mixer until they are fluffy.
- Pour the mixture over the almond meal and mix to incorporate.
- Remove about 1/3 of the batter to a separate smaller bowl and mix in the cocoa powder.
- Fill the muffin tins with the regular batter and then using a large spoon, top with the cocoa batter in the middle.
- Thinly slice the ½ banana that is left and top the muffins with slices of banana and then the sliced almonds.
- Sprinkle the coarse salt over the tops and bake.
- At about the 35 minute mark, check the doneness by using a toothpick. If it comes out clean, remove the muffins to cool. Otherwise, continue to cook for another 5-7 minutes until done.
