My Lemon Garlic Roasted Broccoli and Cauliflower recipe is the perfect healthy side dish. Super easy, just a few ingredients, and this dish is ready in just 20 minutes!

Roasted Broccoli and Cauliflower Recipe

Let’s face it, we love broccoli and we love cauliflower. We love them alone and we love them together, prepared in a lot of ways. I was looking for a fresh new way to make these beloved cruciferous veggies and this delicious recipe was a hit! My local store had these beautiful purple cauliflower and Romanesco broccoli and I knew I had to showcase them in some way.

What Kind of Cauliflower and Broccoli Can You Roast?

The answer is simply: any kind! I even had some leftover regular broccoli in the fridge and I tossed that on the sheet pan, too. Both of these veggies cook in the same amount of time so they pair perfectly together.

The key to roasting these veggies perfectly is in the oven temp – it needs to be HOT. I preheat the oven to 450, nice and toasty. The next most important step is to use a generous amount of oil and seasonings.

How to Season Roasted Vegetables

This is where you can get creative depending on the flavor profile you’re looking for! In this instance, I wanted lemony-garlic flavors so my seasonings were simple:

  • Salt
  • Pepper
  • Fresh Garlic
  • Lemon Juice
  • Grated Parmesan
  • Lemon Zest

What To Serve With Roasted Vegetables

This dish pairs well with ANY protein. We had it along side turkey burgers, but would be perfect with grilled chicken, beef, or fish. You could even toss in some fresh shrimp for an easy sheet pan dinner!

How To Make Roasted Lemon Garlic Broccoli and Cauliflower In The Oven

As I said, it’s important to get your oven nice and hot. Preheat to 450 degrees and then toss the veggies with oil, salt, pepper and lemon juice. Then we bake them for about 20 minutes or until they show a little bit of char. Then right before serving we top with fresh grated Parmesan cheese and lemon zest.

Ingredients

  • 1 Large Head Cauliflower, any variety, core removed, chopped
  • 1 Large Bunch Broccoli, any variety, core removed, chopped
  • 3 cloves Fresh Garlic, minced
  • 1/4 cup Extra Virgin Olive Oil
  • 1 tsp Salt
  • 1/2 tsp Pepper
  • 1 large Lemon, juiced
  • Zest of lemon
  • 1/3 cup Parmesan

Instructions

  1. Preheat oven to 450° and line a large sheet pan with parchment paper.
  2. Add the broccoli, cauliflower and garlic to the sheet pan.
  3. Drizzle with olive oil.
  4. Using a spatula, toss the veggies to evenly coat with the olive oil.
  5. Season with salt and pepper, then squeeze the lemon juice over the veggies.
  6. Toss again.
  7. Bake for approximately 20 minutes or until the veggies begin to get a little crisp on the top.
  8. Remove from the oven and add the grated Parmesan and lemon zest.
  9. Serve with your favorite protein!
