So you’re looking for something easy, yummy and fun, huh? Well, here you go, my friends! I had some leftover zucchini last week and I was hungry for pizza so I thought, “Why not make a pizza out of zucchini??”
Yes, as a matter of fact, I am a simple thinker, please don’t judge me.
Low Carb Zucchini Pizza
For those of you who can’t have regular pizza dough with wheat, or are looking for a low carb, keto alternative if that’s your thing, this is a great way to enjoy the taste of pizza without crust. And, it’s easy – we aren’t making a crust made of zucchini, but simply using the veggie as it is.

Zucchini is not only a super versatile ingredient in recipes (hello, zoodles!) but a great source of vitamin C, one of the best sources of fiber, and high in manganese. We naturally create small amounts of manganese, but this important mineral is a powerful antioxidant, and is important for normal functioning of our brains and nervous systems…so the more we can add through nutrition and foods like zucchini, the better!

How To Make Zucchini Pizza Boats
This recipe could not be easier; just a few simple ingredients, build the pizza and then bake it for 20 minutes – that’s it!
For this recipe I am making zucchini boats with ground beef and pepperoni. But if you prefer vegetarian zucchini boats, or are in a hurry, you could save 10 minutes if you just use marinara sauce – and don’t forget the cheese!
Zucchini Pizza Boats Recipe
A simple and delicious low carb dinner that your family will love. Any of your favorite pizza combinations will do!
Ingredients
- 8 Med - Large Zucchini
- 1 lb Ground turkey, beef, or chicken
- 1 Cup Pizza Sauce
- 24 Slices Pepperoni
- 1 Cup Mozzarella Cheese, Shredded
- 1 tsp Italian Seasoning
- Salt & Pepper to season
Instructions
- Preheat oven to 375
- Line a baking sheet with parchment paper
- Remove ends from zucchini and slice in half, lengthwise, scooping out the middles
- Lay the slices of zucchini onto the parchment paper; season with salt and pepper
- In a skillet, brown your desired ground meat until cooked thoroughly
- Add the pizza sauce to your ground meat and simmer just until warmed through
- Spoon the meat into the zucchini equally
- Cover with cheese, reserving just a little bit for the tops
- Place 3-4 slices of pepperoni onto each "boat", then top with a bit more cheese
- Season each "boat" with Italian Seasoning
- Bake until cheese is all melty; about 20 minutes
