Have you ever tried to make breaded zucchini only to have them turn out kind of mushy? That’s not going to happen with these, my friend!

The secret is to get your oven good and hot, then flip the zucchini sticks halfway through. This will ensure that they get nice and crispy.

Can I Use Summer or Yellow Squash?

Yes! No changes needed, you’ll make them the exact same way – and if you have both zucchini and yellow, use them!

Should I Peel the Zucchini Before Slicing?

You don’t need to peel them; the skin is very delicate and adds the perfect texture for zucchini fries.

How to Make The Best Baked Zucchini Fries

The first thing you’ll do is give them a quick wash. Then snip the ends off. Cut the zucchini in half, then slice each half into strips like the above picture.

Line a baking sheet with aluminum and parchment paper.

Prep the zucchini in the egg wash and bread crumbs.

Bake them in your hot oven (425), flip them halfway through, then bake until golden and crispy.

Ingredients

  • 2 eggs
  • 2 large zucchini, sliced into “sticks”
  • 1 ½ cups Italian seasoned bread crumbs
  • ½ cup grated Parmesan cheese
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder

Instructions

    Preheat oven to 425 degrees

    Line a baking sheet with parchment paper

    Wash and rinse your zucchini, then trim the ends off

    Slice the zucchini in half then slice each half into strips

    Using two separate bowls, whisk the eggs in one and the bread crumbs mixed with Parmesan cheese in the other

    Working with just a few (about 4-5) at a time, dip the zucchini sticks into the egg, letting it drain off a bit, then dredge through the breadcrumbs…be sure to get them good and coated

    Place them onto the baking sheet and season with salt, pepper and garlic powder

    Bake for approximately 15 minutes.  Using a spatula, flip the zucchini over and bake for another 10 minutes until golden brown and crispy

    Remove from oven and serve with your favorite dipping sauce - marinara, ranch, honey mustard - so many options!

Notes

You can also use Panko breadcrumbs!
