Sweet Corn and Zucchini Pizza

A perfect way to use that last bit of Summer produce! My sweet corn and zucchini pizza is savory, sweet and topped with smoky bacon and fresh tomatoes!

Healthy Summer Pizza

Summer veggies aren’t quite gone yet but before they were I wanted to incorporate both corn and zucchini on a pizza because I think they pair beautifully.

We grabbed some fresh corn on the cob and zucchini from a roadside farmstand and I just knew I had to toss them together to make a Summer pizza.

Ingredients in Corn and Zucchini Pizza

The rest of the ingredients in this pizza are simple and nothing fancy. We used fresh mozzarella because that’s my favorite when I have it, but you could certainly grab the already shredded kind and it will be perfect.

I also tossed the corn and zucchini with a bit of lime juice and some herbs to brighten the flavors up. We used up the rest of the tomatoes we had and added some leftover bacon because bacon makes everything better, amiright?

To make things even simpler, I used my favorite all-ready-to-top Naan bread. A little bit of olive oil and some garlic and we are good to go!

Can you use canned or frozen corn?

You sure can! If using canned or frozen, try to get the sweet kernels. If using frozen, just rinse under cool water and drain to thaw and it’s ready to go.

How to Make Sweet Corn and Zucchini Pizza

As I mentioned, we are using a Naan flatbread and topping it with all of these amazing Summer ingredients.

  1. Preheat oven to 400° and line a baking sheet with parchment paper
  2. Place both flatbreads onto the baking sheet and add 1T each extra virgin olive oil; cover to edge of each Naan.
  3. Top each Naan bread with mozzarella
  4. In a small bowl, add the following ingredients: zucchini, corn, garlic, herbs, salt & pepper, and finally the lime juice. Toss the ingredients together.
  5. Spoon the corn and zucchini mix equally onto the flatbreads and spread around to cover.
  6. Top with bacon, tomatoes and finally 1T each of grated Parmesan.
  7. Bake for approximately 10-12 minutes or until cheese begins to get bubbly and edges brown.
  8. Remove from oven, let cool 5 minutes then slice and serve!

  • 2 Naan Flatbreads
  • 2 Tbsp Extra Virgin Olive Oil
  • 2 tsp Minced Garlic
  • 6 oz Fresh Mozzarella, or 2 cups Shredded
  • 1 small Zucchini, diced
  • 1 cup Fresh, Frozen or Canned Corn, If frozen, rinse to thaw
  • 1/4 tsp Dried Basil
  • 1/4 tsp Dried Thyme
  • 1/4 tsp Dried Oregano
  • Salt & Pepper, to taste
  • Juice of one Lime
  • 4 slices Cooked Bacon, chopped
  • 6 Cherry Tomatoes, chopped
  • 2 Tbsp Fresh Parmesan

Instructions

Notes

Optional - I added a drizzle of balsamic glaze to finish the pizza off and it was delicious!  Feel free to omit if you don't have it on hand!
