An easy casserole version of a favorite iconic dish, my Low Carb Baked Turkey Cordon Bleu is made with leftover turkey or chicken! No pounding or rolling!

There are so many ways to use leftover turkey and chicken and I just love coming up with different ideas to add it to recipes. It’s so easy to pick up a rotisserie chicken or turkey breast for a quick weeknight meal.

And oftentimes there’s plenty of meat left to make one, if not two, more meals! This is what happened with this low carb casseroles recipe because I ended up with a leftover slice of ham from Sunday breakfast, too.

It’s a great way to use up all kinds of leftover ingredients…plus there’s a creamy dijon sauce! Next time you have leftovers, you’ll want to make this amazing easy keto chicken cordon bleu or turkey cordon bleu.

Don’t have leftovers? Just cook up some boneless skinless chicken breasts or turkey cutlets and use those!

Easy Casserole Recipe

I’ve never been a fan of touching raw poultry. Is anyone, really? I’ll tell you, if a recipe calls for me to handle it more than I need to, I’m likely not going to make it.

Normally, Chicken or Turkey Cordon Bleu requires you to pound out some chicken breast with a meat mallet, stuff it with ham and cheese, then roll it all up and dip it in bread crumbs.

This takes the whole messy step of touching all of that raw meat out and all you’re left with having to do is mixing everything up!  

PLUS, this is a low-carb recipe because we’re not using a breadcrumb mixture. If low carb isn’t your thing and you love a nice crumb on top of the casserole, go for it, friends! OR use crushed pork rinds!

Add some buttery crumbs to the top before baking. I’ve even used some crushed up potato chips. Whatever your favorite topping is, add it! I think your entire family is going to love this easy casserole dish made with simple ingredients.

What Should I Serve With Turkey Cordon Bleu?

If you want to keep this recipe keto or low carb, serve it with a side of veggies like green beans, broccoli or even a fresh green side salad. If the ketogenic diet is not your thing, it’s PERFECT with rice, pasta, or garlic bread!

How to Make my Low Carb Baked Turkey Cordon Bleu or Low Carb Chicken Cordon Bleu

The best part about this easy recipe is that you mix everything in a bowl and bake it in a cast iron skillet or baking dish; hardly any dishes and on the table in about 30 minutes. That’s my kind of meal! If you’re looking for a keto chicken cordon bleu casserole, this is it.

Ingredients in Cordon Bleu

  • 1 10oz can Cream of Mushroom or Chicken Soup
  • 2 tsp of dijon mustard or lemon juice
  • 1/2 can Milk or heavy cream for an extra creamy sauce
  • 1/4 cup Greek Yogurt or Sour Cream, Plain
  • 1 tsp Garlic Powder
  • 12 oz Rotisserie Chicken or Turkey, Chopped
  • 4 oz Ham, Chopped or Diced
  • 1/3 cup Shredded Swiss or Swiss Cheese Slices, or gruyere cheese
  • 1/3 cup Shredded Mozzarella or Parmesan Cheese
  • For a little heat, add a dash of cayenne pepper

How to make my easy chicken cordon bleu recipe or turkey cordon bleu recipe:

  • Preheat Oven to 350 degrees
  • Spray an 8×8 baking dish with nonstick spray. I used my cast iron skillet.
  • In a large bowl make the cream sauce: mix together soup, milk, yogurt or sour cream, and garlic powder
  • Add in shredded chicken or turkey and ham and stir to combine
  • Scoop the mixture into the baking dish and top with cheese
  • Bake for 20-25 minutes or until cheese is golden brown and casserole is bubbling.
  • Remove from oven and serve! 
  • Store leftovers in an airtight container or cover with a piece of plastic wrap.

Instructions

  5. Scoop the mixture into the baking dish and top wtih cheese
  6. Bake for 20-25 minutes or until cheese begins to brown and casserole is bubbling.
  7. Remove from oven and serve!

Notes

You can also add a few teaspoons of dijon mustard or lemon juice to the cream sauce. Feel free to play with cheeses, as well - like gruyere and Parmesan.
