This recipe couldn’t be easier. The binder is simply boxed stuffing mix, some chicken broth, an egg, shredded carrots and celery, and then it’s topped with a mixture of cranberry sauce and ketchup!
Thanksgiving Meatloaf

Ingredients
- 1 lb Ground Turkey, or ground chicken
- 1 small Carrot, shredded
- 1 stalk Celery, finely diced
- 1 8oz Box of Stuffing, including seasoning packet
- 1/2 cup Chicken Broth, or milk
- 1/2 cup Jarred or Canned Cranberry Sauce
- 1/2 cup Ketchup
Instructions
- Preheat oven to 375°
- Spray a meatloaf pan with nonstick spray
- In a large bowl, add turkey, carrots, celery, egg, stuffing mix and seasoning packet, and chicken broth. Be sure to wet the stuffing with the chicken broth before mixing all of the ingredients.
- Mix the turkey mixture together until incorporated.
- Place the mixture into the pan and pat to create a loaf.
- In a small bowl mix the cranberry sauce and ketchup together.
- Top the meatloaf with the cranberry sauce mixture.
- Bake for 40-45 minutes or until the center of the meatloaf reaches a temperature of at least 165°
- Remove from oven and let rest for about 10 minutes.
- Slice and serve.
