Is Steak Good For You?
We don’t eat a lot of red meat because of Hubby’s kidney health, but when we are craving it, we know it’s what our bodies need. Red meat has gotten such a bad rap over the years and it’s just not necessary.
It’s rich in Vitamin D, B Vitamins, and Iron among other minerals. It also contains equal parts saturated and monounsaturated fats which are both beneficial fatty acids.
If you find yourself craving red meat, and you really listen to your body, it is likely telling you that it could use some of these nutrients listed.
And what better way to meet (see what I did there…?) that need than with a delicious, nutritious meal!
Steak and Sweet Potato Hash
This steak and sweet potatoes with peppers recipe is an easy way to satisfy your craving. It’s quick, easy, and super flavorful – you’ll want to make extra for breakfast (top it with an egg) or lunch!
It’s also a great recipe for meal prep because it reheats beautifully. The combination of sweet and savory is my absolute favorite.
Ingredients in Steak and Sweet Potato Skillet
All you will need for this recipe is flat iron or skirt steak, sweet potatoes, bell peppers, marinade, olive oil, salt & pepper.
Marinated Steak Tips
Here in the Northeast, marinated steak tips is a huge thing. You can find them in almost all of the butcher shops and restaurants, near and far. They come in some amazing flavors, too.
That’s what we are using today – marinated sirloin steak tip – because the beef is already full of flavor which makes this recipe even easier to make.
However, if you aren’t able to get these, feel free to use your favorite marinade and sirloin steak cut into cubes or strips, and allow yourself some time to marinate.
Quite honestly, I’ve always found Zesty Italian Dressing to be an easy, and always delicious marinade for any type of meat or fish.
Easy Steak Marinade
One of the easiest ways to marinate steak is to simply cut the steak into cubes, place it into a sealed bag or glass container, then add your favorite Italian dressing – Zesty Italian dressing is even better!
Cast Iron Steak Bites
We are also using one of my favorite kitchen items, my cast iron skillet. Heating it up and searing the steak bites so that they keep their delicious flavor and tenderness.
How to Make Steak and Sweet Potatoes with Peppers
First, you’ll roast the sweet potatoes and peppers. Next, you’ll quickly sear the steak bites, then add everything to the skillet and toss. I like to add some kale at the end, too.

Ingredients
- Prepare Steak
- 1.5 lb Flat Iron Steak or Sirloin Steak, Cut into bite-sized pieces
- 1 cup Your Favorite Marinade, or Italian Dressing
- 2 Tbsp Extra Virgin Olive Oil
- Prepare Veggies
- 4 cups Sweet Potatoes, Diced
- 1 red or green Bell Pepper, Diced
- 2 cups Shredded Kale, Optional
- 2 Tbsp Extra Virgin Olive Oil
- Salt & Pepper, To taste
Instructions
Marinate the Steak
- Marinate the steak bites for at least 30 minutes or up to a few days ahead of time. The longer, the better, but even 30 minutes makes such a difference. You can even just let the meat swim happily in the marinade while you cut up & cook your veggies.
Pre-Bake your Veggies
- Preheat the oven to 425
- On a baking sheet, toss your veggies (excluding kale, if using) with olive oil and salt and pepper.
- Bake for 20 minutes, toss, then bake for 10 minutes more, remove from oven.
- Once the veggies have baked, add olive oil to a large cast iron pan, or skillet of choice over med/high heat until the olive oil starts to ripple.
- While this is happening, discard any leftover marinade and then place your steak bites in a single layer in the pan, and saute for about 5 minutes, browning all sides of the meat. Likely no more than 5 minutes is needed.
- Add the roasted veggies to the skillet and stir everything together and sautéing about 2 more minutes.
- Remove from heat and then add the chopped kale and stir.
- Serve and Enjoy!
