Easy Slow Roasted Cherry Tomatoes
Delicious Easy Slow Roasted Cherry Tomatoes with fresh garlic and herbs. These little guys are sweet, savory and the perfect addition to eggs, pasta, pizza, salads, chicken, or seafood.
Fresh Tomatoes – Summer Flavor
During the Summer, fresh flavorful tomatoes are in such abundance, and there are so many recipes and many different options. At the time of my original post, it was the dead of Winter, and I really wanted tomatoes with eggs and toast in the morning. This is a great way to use your abundance during tomato season – why not try slow roasting!
This is one of the easiest recipes you’ll make and the end result is amazing. One of my most favorite ways to use small tomatoes is to roast them for a long time. It brings out the most amazing flavor of the tomatoes.
We start with beautiful cherry tomatoes, halve them, drizzle them with buttery olive oil, add fresh garlic and herbs, salt & pepper, and then pop them into the oven to slow roast for a couple of hours.
What Kind of Tomatoes are Best for Roasting
Any kind of tomatoes you have on hand will work for this recipe, but I like to use smaller varieties like cherry and grape tomatoes. Perfect tossed onto a salad, scrambled eggs, ricotta toast, pizza and pasta.
How Long Does it Take to Roast Tomatoes
Give your tomatoes a long roasting time (two hours, in fact) for perfect caramelization. The good news is that you don’t have to do anything to them once they are in the oven; just set it and forget it.
When the tomatoes have completed roasting they’ll have lost almost all of their natural juices. What you get is the most delicious, deep tomato flavor profile.
Can You Slow Roast Tomatoes Ahead of Time
Yes, you totally make these a day ahead and have them the next day or make a big batch and freeze them. It’s a great way to use that glut of tomatoes. To freeze, place the tomatoes in freezer bags or an airtight container if storing in the fridge. They will keep for about 6 weeks in the freezer.
You can also serve these at room temperature if having them on a charcuterie platter. Place them in a small bowl alongside some crusty bread and sprinkle with coarse sea salt.
How to Serve Roasted Tomatoes
After I made these I had them three days in a row for breakfast and would have had them on the 4th day except they were gone!
Here are some ideas for how to enjoy roasted cherry tomatoes:
- Scrambled eggs (this is how I had them!)
- Homemade Pizza
- Salad
- Caprese Salad
- Grilled Chicken or Fish
- Pasta
- With basil, and crusty bread, bruschetta style
- Toss them in your food processor to make a delicious roasted tomato sauce

Roasted Cherry Tomatoes
Delicious cherry tomatoes are slow roasted with fresh garlic and herbs. Sweet, savory and the perfect addition to eggs, pasta, pizza, salads, chicken, or seafood.
Ingredients
- 3-4 Pints Cherry or Grape Tomatoes
- 5-6 Cloves Garlic, No need to peel
- 3 Tbsp Fresh Thyme, or 2tsp dried thyme
- 2-3 Sprigs Fresh Rosemary
- 2 T Olive Oil
- 1 tsp Salt
- 1/2 tsp Black Pepper
Instructions
- Preheat oven to 275 degrees
- Line a baking sheet with foil and/or parchment paper (I like to use both for easy cleanup)
- Cut the tomatoes into half and toss them onto the baking sheet
- Drizzle tomatoes with olive oil and toss to coat
- Sprinkle the salt and pepper over all of the tomatoes
- Nestle the garlic cloves amongst the tomatoes
- Top with rosemary sprigs and thyme leaves
- Roast in the oven, untouched, for 2 hours
- You will want them to be "dry" by the time they are done. You might need to add 15-20 more minutes.
Notes
To store the tomatoes, place them into a sealed container in the fridge for up to 1 week or in the freezer for up to 3 months.

I have never been a tomato eater…like ever. But I have fond memories of my grandma eating BLT sandwiches, mmm. She would make me Bacon and Mayo ones haha. You makes those cutie cherry tomatoes look amazing!
