Roasted Balsamic Strawberries

It’s practically Summertime (finally!) and fresh fruit, like these gorgeous strawberries, will soon be in abundance!  I was walking through the grocery store yesterday and strawberries were on sale for $1.77 a pack – WHAT!?  So, of course, I had to grab them up.  How do you create something delicious and perhaps different with this amazing berry?  Roasted balsamic strawberries, my friends!

I can most certainly eat a whole pack of these by myself, and hubby is not a “seedy” fruit fan…but I didn’t want them to go bad before I got to them.  PLUS, I was looking for a fun idea for #toastthursday (Haven’t heard of it?  Check out my Instragram feed; it’s kind of my thing.)

Strawberries are not only yummy, they are packed with vitamins, fiber, and lots of antioxidants.  And according to Organic Facts, they improve high blood pressure, arthritis and other cardiovascular issues, are beneficial to eye care and proper brain function, and greatly benefit our immune system!

I bet you’re asking, “Why in the world would you need to ROAST fresh strawberries when they are already amazingly delicious right out of the package??”  The answer is this:  caramelized goodness.

I mean look at them?  In all their gloriousness atop creamy ricotta cheese and honey on crunchy grain bread with some fresh basil for a fresh kick…mmmmmm!

Roasted Balsamic Strawberries Recipe

Roasted Balsamic Strawberries Recipe

Yield: 2 servings
Prep Time: 5 minutes
Cook Time: 10 minutes
Total Time: 15 minutes

Roasted caramelized deliciousness!

Ingredients

  • 8 oz Fresh Strawberries, Washed, rinsed, tops removed and cut in half
  • 1/2 tsp Olive OIl
  • 1 tsp Balsamic Vinegar
  • 2-3 sprigs Fresh Basil, Chopped

Instructions

  1. Preheat oven to 425
  2. Line a baking sheet with parchment paper
  3. In a bowl, add strawberries, olive oil, and balsamic vinegar; mix to coat
  4. Spread the berries evenly over the parchment paper
  5. Bake for 10 minutes - not too long because they'll get mushy!
  6. Remove from oven and enjoy!  I put mine on toast, but these would be just as amazing on ice cream, with mascarpone cheese, in your smoothies, or just with a spoon!
