Easy Oven-Roasted Garlic Potatoes

This recipe couldn’t be easier! All you have to do is just cut, toss, and roast!

This wasn’t a stretch in any way as far as a difficult recipe, which makes it even better in my book.  I made these for dinner and then enjoyed them for the rest of the week for breakfast! 

A recipe that can double for other meals?  Who doesn’t love that??

Easy Oven-Roasted Potatoes

Easy Oven-Roasted Garlic Potatoes

Yield: 6
Prep Time: 10 minutes
Cook Time: 45 minutes
Total Time: 55 minutes

A super easy side dish of comfort!

Ingredients

  • 2-3 lbs Potatoes
  • 1/4 cup Olive oil
  • 1 1/2 tsp Salt, Kosher, Sea
  • 1 tsp Cracked black pepper
  • 2 cloves Garlic, Minced
  • 1/3 cup Parmesan, Shredded
  • 2 Tbsp Fresh parsley, Rough chopped

Instructions

  1. Preheat oven to 400 degrees
  2. Line a baking sheet with parchment or foil
  3. Rinse and clean potatoes, then cut into uniform-ish cubes
  4. In a large bowl, add potatoes, garlic and olive oil, then toss to coat
  5. Spread the potatoes onto the baking sheet in a single layer and sprinkle with salt, pepper and cheese
  6. Bake for 25 minutes, then flip
  7. Bake for an additional 20 minutes, remove from oven and top with parsley.
  8. Serve and Enjoy!
