Am I the only weirdo that gets super excited to see veggies in different colors? Purple and pink potatoes, purple and white carrots, purple cauliflower, purple and white sweet potatoes…hmmm, I’m seeing a theme here…
Needless to say whenever I do come across different varieties of veggies, I am compelled to buy them and do SOMETHING with them 😉
What Kind of Potatoes Are Best for Roasting?
No need to stress about the kind of potatoes, your favorite kind will do! There may be a slight adjustment in the timing, but only by a few minutes; just test the potatoes at the 25 minute mark.
How to Make Oven-Roasted Garlic Potatoes
This recipe couldn’t be easier! All you have to do is just cut, toss, and roast!
This wasn’t a stretch in any way as far as a difficult recipe, which makes it even better in my book. I made these for dinner and then enjoyed them for the rest of the week for breakfast!
A recipe that can double for other meals? Who doesn’t love that??
Easy Oven-Roasted Garlic Potatoes
A super easy side dish of comfort!
Ingredients
- 2-3 lbs Potatoes
- 1/4 cup Olive oil
- 1 1/2 tsp Salt, Kosher, Sea
- 1 tsp Cracked black pepper
- 2 cloves Garlic, Minced
- 1/3 cup Parmesan, Shredded
- 2 Tbsp Fresh parsley, Rough chopped
Instructions
- Preheat oven to 400 degrees
- Line a baking sheet with parchment or foil
- Rinse and clean potatoes, then cut into uniform-ish cubes
- In a large bowl, add potatoes, garlic and olive oil, then toss to coat
- Spread the potatoes onto the baking sheet in a single layer and sprinkle with salt, pepper and cheese
- Bake for 25 minutes, then flip
- Bake for an additional 20 minutes, remove from oven and top with parsley.
- Serve and Enjoy!
