I shredded my own cabbage and carrots for this salad but I thought about how it could be even easier than it already is just by buying a bag of slaw mix! AND, I used already prepared quinoa, so all I needed to do was steam it in the microwave, cool it, then toss it with the veggies, some crunchy garlic cashews, dressing and voila! Ready in 10 minutes!

How to Make Crunchy Asian Salad with Quinoa

As I mentioned, you could easily start from scratch on this, but it is just as easy to go with precut veggies and packaged quinoa. This time, I had some purple cabbage and some carrots and snap peas, so that’s what I used. Next time, I’ll definitely grab a bag of shredded cabbage/slaw mix especially if I’m short on time. I think adding some edamame next time would be a great addition, as well. The dressing for this salad only requires 4 ingredients that you likely already have in your pantry! I’m definitely a fan of already prepared quinoa…when I have tried to make it on my own, it always comes out mushy. So instead of spending the money on mushy-made quinoa, I decided to wave the flag and resign myself to buying it from now on. It’s perfectly cooked without me messing it up! Let’s get to it.

Ingredients

Dressing

  • 1/4 cup Rice Vinegar
  • 2 T Soy Sauce
  • 2 T Honey
  • 2 tsp Toasted Sesame Oil

Salad

  • 2 cups Shredded Cabbage
  • 1/2 cup Shredded Carrots
  • 1/2 cup Sliced Sugar Snap Peas
  • 8 1/2 oz Prepackaged Quinoa, Microwaved and cooled
  • 1/4 cup Chopped Cashews or Peanuts

Instructions

  1. Using a whisk, whisk dressing ingredients together
  2. In a large bowl combine the ingredients for the salad
  3. Add the dressing to the bowl and toss.
  4. Top with more cashews and serve!
