I don’t know about you, but I am always looking for ways to use leftover chicken. When I pick up a rotisserie chicken, it seems I always have at least half of it left to use in another recipe.
At the end of the week things get creative around here; I’m looking for something easy and to utilize what we have.
When I say I was using what I had, I mean it! I literally had about 2 cups of chicken, a half block of cream cheese, a half a bag of cheddar cheese, some leftover dry ranch seasoning in the packet, a few slices of microwave bacon, and 3 leftover Brioche buns.
It’s like the Universe was telling me to make this, right??
Other Chicken Bacon Ranch Ideas
This recipe doesn’t have to be used to make sandwiches! Get creative and use it as the main ingredient any way you like! Here are some other ideas for Chicken Bacon Ranch:

How To Make Chicken Bacon Ranch Sandwiches
We are tossing everything into the slow cooker – if you’re in a hurry, you can make it quickly on the stove top! I’ll include instructions for both.
I used leftover chicken, but you can make it using frozen or thawed chicken breasts, just adjust your timing.
If you are using frozen chicken breast, I’d cook this on low for 6-7 hours or high for 3-4 hours.
If you’re using thawed chicken breasts, I’d cook on low 4-6 hours or high 2-3 hours.
Chicken Bacon Ranch Sandwiches

Ingredients
- 4 cups Cooked Chicken
- 1 block Cream Cheese
- 1 packet Dry Ranch Seasoning
- 1 cup Shredded Cheese (Cheddar, Monterey Jack, Colby or a combo of all!)
- 8 sliced Cooked Bacon, Crumbled
- 4 Rolls, Buns, Sliced
Instructions
- In a slow cooker set to LOW, add all of the ingredients and lightly mix
- Cook for 3 hours.
- Stir to combine all of the ingredients.
- Top rolls, then add crumbled bacon.
- Serve with your favorite side dish!
Notes
Saucepan:
If you are using a sauce pan, combine all of the ingredients and cook on low until simmering. Let simmer for about 10 minutes, stirring occasionally, then serve.
Using Frozen Chicken:
If you are using frozen chicken in the slow cooker, allow to cook on low for 6-7 hours or on high for 3-4 hours.
Using Thawed Chicken:
If you are using thawed chicken in the slow cooker, allow to cook on low for 4-6 hours or on high for 2-3.

I don’t like biscuits, so what other bread would work & taste as well?

It says 4 cups cooked chicken, and then says you can use frozen or thawed chicken. Does that mean I can use chicken that isn’t cooked?
