Blackberry Basil Ricotta Pizza

It was about a year ago when I first saw the recipe for this gorgeous Summer pizza on social media and I instantly drooled…which isn’t that rare, honestly…but seriously, the combination of ingredients? Come on, how had I not thought of this before? Blackerries, yum. Ricotta, uh yumm. Fresh basil, yep yum. Pizza, how long are we going to play this game?
And it was SO easy!
One of the things I love about this pizza is the smashed berries which are almost a hidden surprise as a sauce. Blackberry pizza? It’s brilliant! Also, the fact that it comes together so quickly. You’ve got this beautiful pizza ready to devour in less than 20 minutes from start to finish. That’s my kind of recipe!
How to Make Blackberry Basil Ricotta Pizza
I have to admit, I was so eager to make this pizza that I grabbed a premade crust and just added these gorgeous toppings. Feel free to make your own crust! Honestly, I’m of the mindset why recreate the wheel when there are delicious premade crusts just waiting for you to decorate them! I absolutely love ricotta on my pizza. Blackberry Basil Ricotta Pizza Recipe
Fresh and light - so delicious!
Ingredients
- 1 Personal-sized whole wheat crust
- 1 Cup Fresh or frozen blackberries, (Divided)
- 2 Tbsp Extra virgin olive oil
- 1/2 Cup Shredded mozzarella
- 1/4 Cup Shredded Parmesan
- 3 Tbsp Ricotta cheese
- 1/8 tsp Salt
- 1/8 tsp Fresh ground black pepper
- 1/4 tsp Granulated garlic
- 4-5 Fresh basil leaves, (Julienned)
Instructions
- Preheat oven to 450 degrees
- Place a pizza stone or cast iron skillet (large enough to whole the crust) into the oven while it’s preheating
- Using a fork, smash half of the berries, set aside the other half and leave whole
- Brush or rub olive oil all over the crust, sprinkle with granulated garlic
- Spoon the smashed berries onto the crust; no need to be neat here
- Sprinkle mozzarella cheese over the crust
- Spoon pieces of the ricotta over the cheese
- Place the rest of the berries on the crust
- Sprinkle with shredded Parmesan
- Add salt, generous amount of pepper, your preference
- Using an oven mitt, remove hot pan from oven
- Carefully place the pizza onto the pan
- Bake for 8-10 minutes or until cheese begins to brown
- Remove from the oven, top with fresh basil
- Slice and enjoy!
