Yesterday was the boy’s birthday and I don’t know about your husband but mine hates all things celebratory about his special-to-ME-day.

No fanfare, no need for presents. He’s basically the complete opposite of me when it comes to birthdays.

The one thing he does love, however, is treats, so it was the perfect opportunity to make his favorite vanilla cupcakes.

The Best Vanilla Cupcakes

If you are a vanilla fan, these little guys are jam-packed with tons of vanilla flavor and in my opinion are pretty much the best vanilla cupcakes, hands down.

When I have vanilla beans, I use them but I didn’t yesterday so I went with the standard TABLESPOON of vanilla extract in the batter and extra vanilla in the buttercream frosting, too.

If you’re a fan of light and fluffy cupcakes, this may not be what you’re looking for…but if you’re like me and like a more hearty cupcake, you’re going to love these!

Not too light and not too dense; they’re juusssttt right.

Ingredients

Cupcakes

  • 1/4 cup Butter, room temp
  • 1/4 cup Canola Oil
  • 3/4 cup Sugar
  • 3/4 cup Buttermilk**, room temp
  • 2 large Eggs, room temp
  • 1 T Vanilla Extract
  • 1 3/4 cup All Purpose Flour
  • 1/2 tsp Baking Soda
  • 1/4 tsp Kosher Salt

Frosting

  • 1 cup Salted Butter, room temp
  • 1 T Vanilla Extract
  • 3 cups Powdered Sugar
  • 5 T Milk

Instructions

Making the Cupcakes

  1. Preheat oven to 400 degrees**
  2. Line a cupcake pan with cupcake liners.
  3. In a stand mixer or large bowl, cream butter, oil, and sugar together until light and fluffy.
  4. Add buttermilk, eggs, and vanilla and mix thoroughly.
  5. Add flour, baking soda, and salt and MIX ONLY UNTIL COMBINED - this will only take about 3-4 rotations of the attachment you're using. Scrape the sides of the bowl to incorporate everything.
  6. Using an ice cream scoop or large spoon, fill cupcake liners about 75% full.
  7. Place the cupcakes into the center of the oven and bake for 6 minutes.
  8. WITHOUT OPENING THE OVEN DOOR, reduce heat to 350 and bake for another 10-11 minutes until the tops of the cupcakes spring back a bit when touched. Try not to overcook!
  9. Remove from the oven and remove the cupcakes from the pan to a cooling rack, right away.

Making the Frosting

  1. Using a whisk attachment, whisk butter until fluffy.
  2. Add vanilla extract and mix on medium speed.
  3. Using 1/2 cup measurements, add powdered sugar to the mixer until all of the sugar has been added.
  4. Add milk 1 Tablespoon at a time and continue to mix.
  5. When cupcakes have cooled completely, frost.

Options

  1. Sprinkle with your favorite festive toppings!

Notes

**Buttermilk Substitute:  If you don't have buttermilk, no worries, just mix 3/4 cup whole milk with 1 Tablespoon of Vinegar or Lemon Juice.  I often use this instead of buttermilk!

**Oven Temperature:  This will be the initial temp on the oven and then after 6 minutes, WITHOUT OPENING THE OVEN, you'll lower the temp to 350 for the remaining 10-11 minutes.  This gives the cupcakes a nice domed top.

To frost these, I just scooped the frosting into a ziploc bag and cut a whole in the corner – voila! Nothing fancy here! Don’t you love the pretty sprinkles on top??
