Are you a soup person? I’ve recently found out after 30 years of being together that the hubs is lukewarm when it comes to soup!?
I’m not sure how this has never come up before but believe me when I tell you that I was all “Um, what?”
I mean, I don’t normally make soup in the warmer months, but come Fall and Winter, my soup game is on, friends.
So, you know what happens when hubs isn’t a fan of what I’ve made for dinner? PB&J or cereal it is!
The good news is that he loves both of those things so there’s no skin off his nose…so, no soup for you (where all my Seinfeld buddies at?) and more for me.
An Easy Lentil Soup Recipe
Last weekend I spent a few days with my bestie and she showed me a recipe for a similar version of this one from Cooks Illustrated. The thing is that if you want that recipe, you have to pay for a subscription.

Chorizo, Lentil, and Kale Soup
These ingredients are perfect together! I love chorizo and I don’t know about you but it seems like I’m always searching for ways to have it. This is the best recipe I have found, in my opinion.
Can You Freeze Lentil Soup?
You absolutely can freeze this soup. In fact, I recommend it if you have any leftovers – Future You will be so happy you did.
The easiest way to do that is to let the soup cool, then store it in a freezer bag. When you’re ready to enjoy it, take it out of the freezer to thaw, then warm it up in a saucepan.
Do You Cook Lentils Before Adding Them to Soup?
No need! Just place dried lentils in a heat safe bowl and cover them with boiling water for about 30 minutes before using them.
Can I Substitute Spinach for Kale?
You sure can! If you’re not a fan of kale, spinach is perfectly fine. Same instructions; add at the end.
How to Make Spicy Lentil and Chorizo Soup with Kale
This soup is ready in just 30 minutes but it tastes like it’s been simmering all day. You can also make it ahead and just warm it up later because it’s even better the longer it sits.
Can I Make Spicy Lentils with Chorizo Soup in the Slow Cooker?
Yes! Follow the instructions through step 4, then add everything to your slow cooker. SO easy!
Spicy Lentil and Chorizo Soup with Kale
A spicy and hearty soup that will warm you from the inside out! Super easy and quick to make and even better the next day!
Ingredients
- 1 lb Dried Lentils, rinsed and drained
- 8 oz Ground Chorizo
- 1 T Extra Virgin Olive Oil
- 1 med Vidalia Onion, diced
- 3 med Carrots, diced
- 3 med Celery Stalks, diced
- 2 cloves Garlic, minced
- Salt & Pepper, to taste
- 2 T White Vinegar
- 1 15oz can Diced Tomatoes
- 7 cups Chicken Broth
- 1 Bay Leaf
- 2 tsp Smoked Paprika
- 4 cups Kale, chopped
Instructions
- Place the rinsed and drained lentils in a large heatproof bowl and cover with boiling water. Let sit for about 30 minutes.
- While the beans are softening, in a large Dutch Oven or soup pot, brown the chorizo then remove and set aside.
- In the same pot, add the olive oil and heat on medium. Once heated, add the onions, carrots, celery and garlic. Let soften for about 6 minutes, stirring every few minutes so the garlic doesn't burn. Season with salt & pepper.
- Drain the hot water from the beans. Raise the heat on the pot to med/high. Now add the beans and vinegar to the pot and let simmer until the vinegar cooks off. This will take about 2-3 minutes.
- To the pot, add the chorizo, tomatoes (including juice), chicken broth, bay leaf, smoked paprika. Cover the pot with lid leaving some venting, then simmer on med/low for about 30 minutes. Stirring occasionally.
- After 30 minutes, add the kale and stir.
- Remove from heat and enjoy right away or save for later! This makes a great make-ahead meal and is delicious on its own or served with warm bread.
