This Shrimp Scampi with Zucchini Noodles is an easy, weeknight meal – dinner on the table in less than 30 minutes. It’s a fancy dinner you won’t even have to leave your house for!

Shrimp Scampi and Zucchini Noodles Recipe

Ingredients
- 1 T Extra virgin olive oil
- 3 med/large zucchinis, spiral sliced; you can also used a veggie peeler for strips
- 4 cloves Garlic, minced or chopped
- 1/4 cup Good, dry, white wine, the kind you would drink! You can also omit this and the recipe will be just as delicious!
- 4 T Butter
- 1 lb Raw shrimp, peeled
- 1 Lemon, juiced
- 1/4 cup Parmesan cheese
- Salt and Pepper, to taste
Instructions
- Heat olive oil in a large sauté pan over medium high heat.
- Add the garlic and sauté for about 30 seconds; or until you can smell the garlic heating up
- Add the zucchini noodles and sauté for about 2 minutes; don't cook for too long, they will get soggy.
- Remove the zucchini and garlic to a plate while you cook the shrimp.
- To the pan, add the white wine, scraping up any bits on the bottom of the pan, and simmer to reduce to half - about 2 minutes, you shouldn't smell any more alcohol
- Add the butter
- Once the butter melts, add the lemon juice and shrimp and cook until the shrimp turn opaque and pink, tossing them a few times. This will probably only take about 2-3 minutes.
- Add the zucchini noodles and garlic back into the pan and mix to incorporate everything
- Sprinkle with Parmesan cheese.
- Serve it up!
- I like to squeeze more lemon on top, and sprinkle with red pepper flakes, and sometimes more cheese. YUM!
