Sausage, Butternut Squash & Apple Skillet Hash

This Sausage, Butternut Squash and Apple Skillet Hash is perfect recipe for breakfast, brunch, or dinner!

Oh hash…I would have to say that I’m pretty much its biggest fan.  It’s so versatile!  It’s probably my favorite savory breakfast. I’m more of a savory breakfast girl; what about you?  Savory or sweet?  Although I love pancakes and waffles and quick breads, I will gravitate to a savory breakfast 9 times out of 10.

But you don’t just have to save this for breakfast; it’s the perfect addition to your next brunch or the perfect weeknight or Sunday dinner.  And a little goes along way.  These are not crazy ingredients, they never have to be, and you can have a perfectly delicious, inexpensive dinner that everyone will love.

What is Skillet Hash?

Traditionally hash’s were the result of ideas of what to do with leftovers, typically with some kind of diced meat, potatoes, and any other veggies that were ready to be used up.  The ever-popular corned beef hash was the result of using leftover corned beef from St. Patrick’s Day dinners sauteed with some potatoes, onions and other seasonings. Today, you can put whatever you want in your skillet hash!

How to Make Sausage, Butternut Squash and Apple Hash

There are a host of ways to create your own hash; basically, anything you choose can be added to suit your taste.  For this recipe I used some Italian turkey sausage and tossed in some butternut squash, Granny Smith apples, and some kale for some greens.  On other occasions I’ve used sweet potatoes, leftover chicken or beef, onions, peppers…the list goes on.  Sometimes, I’ll just pull all of my leftovers out of the fridge and toss it all in there; I’ve never been disappointed!  There’s something satisfying about using up your leftovers without having to toss anything.

If you’re making this for breakfast, add some dippy eggs atop the savory hash, or simply enjoy it for dinner just as it is – it’s perfectly comforting no matter when you have it! I love using Fall fruits and veggies and when I can create a butternut squash and apple recipe, I’m all over it!

Sausage, Butternut Squash & Apple Skillet Hash

Cook Time: 15 minutes
Total Time: 25 minutes

The perfect combination for breakfast or dinner!

Ingredients

  • 2 tsp Extra virgin olive oil, or coconut oil
  • 1 small Onion, diced
  • 3 cups Butternut squash, cubed
  • 1 Granny Smith apple, peeled, cored, diced
  • 1 lb Ground sausage, Pork, Turkey, etc.
  • 1/2 tsp Garlic powder
  • 1 tsp Fresh thyme, or 1/2 tsp dried thyme
  • 2 Fresh sage leaves, chopped, or 1/2 tsp dried sage
  • 4 cups Kale, chopped

Instructions

  1. In a large skillet, over med heat, add oil and saute butternut squash and onion until beginning to soften; about 8 minutes
  2. Using the same pan, move the veggies to the side and add the sausage to the pan, breaking it up.  Cook until no longer pink; about 6-7 minutes.
  3. When sausage is brown, add apples and seasoning to the pan and stir.  Cook for about 2 minutes, not too long or the apples will get soft.
  4. Finally, add the kale to the pan and stir just to warm the kale.
  5. Remove from heat and serve!

    This is delcious! I did two things differently – I used a “Skinny Sausage” recipe from skinnyms.com that uses ground turkey seasoned to taste like sausage. And I used spinach instead of kale becuase I’m not a fan. It came out great! Delicious and very filling!
