How to Avoid Overcooked Chicken
Hi, my name is Jenn and I overcook chicken…like ALL the time.
I think it’s more of a paranoia thing about raw chicken, but no matter how often I tell myself it’s okay, I always err on the side of caution and my chicken comes out dry.
This was NOT the case with this recipe my friends! I was pleasantly surprised that it was tender, and juicy!
How Do You Know When Meat is Cooked?
It’s likely you will overcook than undercook meat; sounds about right in my case. I found this handy guide that you may enjoy perusing but here are some basic guidelines for cooking meat:
- Chicken (breasts) should be cooked to an internal temp of 150°F / dark meat like thighs should be cooked to 165°F (this was news to me, as I always thought it was 165!)
- Pork is perfectly fine when pink and should be cooked to an internal temp of 145°F (medium) up to 160°F (well). Someday maybe I’ll be a grown up and be fine with pink pork but I’m not there yet…
- Beef from a good butcher is apparently perfectly fine raw, but that’s not how I roll, so if you’re anything like me, here’s a nice guide:
- Steaks rare (120°F), medium-rare (130°F), or medium (140°F), or medium-well (150°F).
- Roasts rare (135°F), med-rare (140°F), medium (150°F), med-well (155°F)
Roasted Chicken in a Cast Iron Skillet
Roasting chicken in a cast iron skillet really takes it to another level, giving not only the chicken but the sauce and delicious depth of flavor.
If you don’t have a cast iron skillet, no worries, it is just as delicious if you want to use a baking dish.
Balsamic Chicken
I loved the caramelization from the balsamic vinegar and the tomatoes. I
used an aged balsamic so there was already some sweetness to it, but you could easily add a little bit of brown sugar sprinkle to the pan when you add the vinegar. It gives it a nice balance.
What to Eat with Roasted Caprese Chicken
I paired this dish with my Roasted Garlic Parmesan Cauliflower and it was amazing! Feel free to add your own side dish – angel hair pasta, some zucchini or summer squash, or rice.

Roasted Caprese Chicken Recipe
A delicious savory sauce is created when you roast fresh tomatoes and it's the perfect compliment to chicken!
Easy Roasted Caprese Chicken looks fancy but isn't!
Ingredients
- 1 1/2 lbs Boneless skinless chicken breast
- 2 Tbsp Olive oil
- 1 1/2 tsp Italian seasoning
- 1/2 tsp Garlic powder
- 1 cup Fresh tomatoes, diced
- 2 cloves Fresh garlic, chopped
- 2 Tbsp Balsamic vinegar
- 2 cups Shredded mozzarella
- 3-4 leaves Fresh basil, chopped; you could used 1tsp dried basil
Instructions
- Preheat oven to 425 degrees
- Season the chicken generously with olive oil, garlic powder, Italian seasoning, salt and pepper
- Place the chicken in a cast iron skillet or in a baking dish (a baking sheet won't allow proper simmering and sauce making)
- Top the chicken with fresh tomatoes and chopped garlic
- Drizzle with balsamic vinegar
- Bake for approximately 20-22 minutes or until thermometer reads at least 160 degrees**you're going to broil this a little longer towards the end so we want to make sure it's not going to overcook
- When almost done, remove from the oven (if using a cast iron skillet, remember NOT to grab the handle without a mitt!)
- Set oven to broil
- Top chicken with cheese and USING THE OVEN MITT (I feel I need to remind you because I may or may not have forgotten this myself...)
- Broil for about 5 minutes or until cheese is brown and bubbly
- Remove and spoon the tomato balsamic sauce onto the chicken
- Top with fresh basil
- Serve with your favorite side dish!
