Pumpkin Banana Bread with Maple Brown Butter Frosting

Pumpkin Banana Bread with Maple Brown Butter Frosting just screams ALL THINGS FALL! You’ll want to make this as soon as possible! It’s the perfect Fall treat!

While lots of people I know started making Fall treats at the end of August, I am most definitely NOT one of those people.

I’m very much the type of person who likes to celebrate each season as they were intended.  When it’s Summer, let’s enjoy the WHOLE Summer to the very end!

It seems no one wants to savor the seasons anymore and it’s sad!  I can assure you that I’m not one of those people 🙂

SO, here we are – TRULY immersed in Fall and, for me, it’s NOW time to make all the Fall things!

Pumpkin Banana Bread Recipe

I mean, come on…these are like my two favorite things baked together. Then top it with brown butter frosting with a hint of maple? Perfection!

What are the ingredients in Pumpkin Banana Bread?

The ingredients you will need for the Pumpkin Banana Bread are: butter, sugar, eggs, vanilla extract, whole milk Greek yogurt or sour cream, ripe bananas, pumpkin puree, apple sauce, all-purpose flour, baking soda, baking powder, ground cinnamon, and salt.

The ingredients for the frosting are: butter, powdered sugar, maple syrup, and milk.

How to Make Pumpkin Banana Bread with Maple Brown Butter Frosting

First, you’ll mix the wet ingredients for the bread in your stand mixer, or use a hand mixer and a large glass mixing bowl.

Next, using a fine mesh sifter, you’ll sift in the dry ingredients and gently mix together.

Pour the batter into a bread pan then bake.

While your bread is baking, make the frosting.

How to Make Brown Butter

If you’ve never made brown butter, I encourage you to – it’s VERY easy, takes about 5 minutes.

The flavor is nutty and sends even delicious regular old butter to a whole ‘nother level.  Use it in savory dishes (sauteed scallops in brown butter, butternut squash ravioli in brown butter…) and sweet (perfect for frostings and in baked goods!).  The brown butter is what gives the flavor of this frosting it’s magic.

In a small saucepan, over medium high heat, add butter and melt.

Stir the butter occasionally; butter will begin to foam.

Let foam and stir; the foam will settle and then it will foam a second time.

Stir, and you will begin to see some brown bits forming at the bottom of the pan (see step 4 below).

Keep stirring until the brown bits are quite visible (see step 5) and the butter begins to smell nutty.

Step 6 below happens quickly after step 5 – remove from heat. Set aside to cool.

Once the brown butter has cooled, you’ll add the maple syrup, powdered sugar, and milk to make the frosting.

Adding maple syrup to the brown butter and making a delicious frosting for this pumpkin banana bread makes it the best pumpkin bread ever.

Don’t let Christmas come around before you make this Pumpkin Banana Bread with Maple Brown Butter Frosting, friends!  I mean, according to the retail stores, Christmas will be here next week…

How Long Does Pumpkin Banana Bread Keep?

This bread will stay fresh on your counter for about 2 days, in your fridge for about a week and in your freezer for up to 6 months. IF it lasts that long!

Ingredients

  • Pumpkin Banana Bread
  • 4 Tbsp Butter, room temperature
  • 1/2 cup Sugar
  • 1/3 cup Egg whites or 2 whole eggs
  • 2 tsp Vanilla extract
  • 1/2 cup Whole milk Greek yogurt
  • 2 ripe Bananas, mashed
  • 1/2 cup Pumpkin puree, NOT pumpkin pie filling, please!
  • 1/2 cup Apple sauce
  • 2 cups All purpose flour, unpacked
  • 1 tsp Baking soda
  • 1 tsp Baking powder
  • 1 tsp Cinnamon
  • 1/2 tsp Salt
  • Maple Brown Butter Frosting
  • 1/2 cup Salted butter
  • 3/4 cup Powdered sugar, unpacked, may need more depending...
  • 2 Tbsp Maple syrup
  • 3 Tbsp Milk

Instructions

Pumpkin Banana Bread

  1. Preheat oven to 350 and either line a bread pan with parchment or spray with non-stick if using a non-stick pan.
  2. In a large bowl, using a hand-held mixer or stand alone mixer, beat room temp butter and sugar until creamy and smooth
  3. Add the vanilla and half of the eggs and beat, then add the other half and beat until fluffy
  4. Add the Greek Yogurt and beat again until fully mixed in.
  5. Add the bananas, pumpkin, and applesauce and beat until just mixed.
  6. Using a sifter over the wet ingredients, add 1 cup flour, baking soda, baking powder and salt, then add the last cup of flour.
  7. Add the cinnamon to the bowl and with either the mixer or with a spatula, quickly incorporate all of the ingredients until just mixed - don't mix too much - it's okay if a few lumps of dry are left.
  8. Pour into the pan, then bake for up to an hour - you'll want to start checking the bread at 45-50 minutes with a toothpick inserted into the center.  It should come out almost clean, but not wet.
  9. When done, cool in the pan for about 15 minutes then remove from pan and cool on a rack.

Maple Brown Butter Frosting

  1. While the bread is cooking, place butter in a small saucepan over medium/high heat and let melt; don't let it boil, but simmering is fine.
  2. The butter may begin to bubble, and you'll see separation with the cultures coming to the top, they will eventually sink to the bottom and become delicious bits of browned goodness.
  3. Once the butter begins to foam, the magic is about to happen.  With a spatula, move the bubbles a bit so that you can see the liquid butter underneath...AS SOON as it starts to turn an amber color (it's very noticeable that it's not yellow anymore) remove it from the heat - the Brown Butter is complete!  You may notice a distinctly nutty scent.
  4. It may seem like a lot, but this process only takes about 3-5 minutes.
  5. Let the brown butter cool while the bread is cooling.
  6. When the bread is cooled completely, stir the powdered sugar into the brown butter, adding the maple syrup and milk.  Depending on consistency, you may need to add either more powdered sugar or more milk.
  7. Frost the bread and ENJOY!
