Instant Pot Rigatoni Rosa

A few weeks ago I was updating some of my old blog posts (cringe worthy photos from back in the day *eeks*) and came across one of my old favorites, Chicken Penne Rosa.
I realized it’s been forever since I made rosa sauce and after seeing that post, I knew I had to make it again soon.
What is Rosa Sauce?
Rosa sauce is just as it sounds: a beautiful creamy tomato sauce. It also sounds really fancy, but you know I’m all about easy here.
So I make it with jarred tomato sauce and jarred Alfredo sauce. Sure you could make your own, but sometimes I just want simple.

It really does make things so super easy and the pasta takes on the delicious flavors, soaks it all up!
How to Avoid the Instant Pot Burn Error
First off, if you get the error, DON’T panic. It’s just a built in safety mechanism.
If you do get it, just set the valve to release, and then once the pin drops, open the lid and stir the contents around a bit and maybe add a little more thin liquid.
I’m going to give you some tips on how to avoid it though:
- First it’s important that you have enough liquid in the pot. You really need at least 1 cup of THIN liquid.
- If you are using a recipe with a thick sauce (like pasta sauce), you need the addition of some thin liquid to keep things happy in the pot.
- When appropriate, scrape the bottom of the Instant Pot to be sure the bits aren’t sticking before you use the pressure function.
- Try not to add thickeners like flour, corn starch until after the pressure cooking is complete.
- When using milk or cream (like this recipe for instance), you’ll want to thin it out with other liquid like broth or water.
- When making pasta, don’t stir the pasta, let it sit on top of the rest of the ingredients. You’ll see that we do that here, and then pour the thick sauce on top of it.

How to Make Instant Pot Rigatoni
If you follow the instructions above and below in the recipe, you won’t need to worry about that pesky burn error. However, if it happens, no need to worry, just vent, open and stir a bit or add a little more thin liquid.
I love that when you use the Instant Pot everything – including browning the meat – is made in one pot.
No need to brown in one pan, make the pasta in the other, strain the pasta in a colander, then put it all in a baking dish to bake it.
Instant Pot Rigatoni Rosa

Ingredients
- 1 T Olive Oil
- 1 lb Ground Chicken, Turkey, Beef, etc.
- 1 large Carrot, Diced
- 2 stalks Celery, Diced
- 1 small Onion, Diced
- 1 clove Garlic, Chopped
- 2 cup Chicken or Beef Broth
- 1/2 cup Milk
- 16 oz Rigatoni, Dry
- 1 jar Favorite Prepared Red Sauce
- 1 1/2 cups Favorite Prepared Alfredo Sauce
- 4 Fresh Basil Leaves, Chopped
- Parmesan Cheese, Topping
Instructions
Instant Pot Preparation
- Set your Instant Pot to Saute and once heated (about 5 minutes), add the Olive Oil, swirling to cover the bottom of the pot.
- Add the meat, carrots, celery, and onion cooking until the meat is no longer pink. About 6-7 minutes.
- Stir in the garlic and let cook for about 30 seconds.
- Add the Broth and milk to the meat mixture; no need to stir.
- Add the dry pasta on top of the meat mixture but DO NOT STIR.
- Top the dry pasta with your favorite prepared red sauce; again do not stir.
- Cover the Instant Pot, set the steam valve to Sealed, then set to High Pressure for 7 minutes.
- When ready, perform a quick release by CAREFULLY switching the valve to Venting. I like to place a kitchen towel over the valve before I switch it.
- Once the floating valve drops, carefully open the lid and stir the contents.
- Add your favorite Alfredo sauce and chopped basil and stir.
- Serve topped with shredded or grated Parmesan cheese.
- ENJOY!
Slow Cooker Preparation
- In a large skillet over medium high heat, add olive oil and once heated through add the meat, celery, carrot and onion. Cook until the meat is no longer pink. Remove from heat and set aside.
- Add all of the ingredients except pasta, Alfredo sauce and fresh basil to the slow cooker. Cover and cook on low 4 hours or high for 2 hours.
- When ready, cook the pasta according to package instructions. Drain, then add the pasta, Alfredo sauce and fresh basil to the slow cooker and stir until incorporated.
- Serve topped with shredded or grated Parmesan cheese.
Stove Top Instructions
- Heat a Dutch Oven or Soup Pot on medium high then add the olive oil.
- When olive oil is hot, add the meat and veggies and cook until meat is no longer pink.
- Add all of the rest of the ingredients except Alfredo sauce & fresh basil to the pot and stir. Bring to simmer and cook for about 15 minutes or until the liquid reduces to a bit.
- Meanwhile cook pasta according to package instructions then drain.
- Once the pasta is drained, add to the meat mixture along with Alfredo sauce and stir, bringing to simmer again.
- Remove from heat, add fresh basil, and top with Parmesan cheese.
