How to Make Toasted Marshmallow Syrup.
All you’ll need are a few pantry staples and this syrup comes together in minutes—no fancy gadgets, just your oven’s broil setting, a saucepan, and 4 simple ingredients. My favorite part is the smell of those toasty marshmallows – who needs a campfire? You can make this any time of year.
What are the Ingredients for Toasted Marshmallow Coffee Syrup?
- 1 cup granulated sugar
- 1 cup water
- 8 large marshmallows (regular size)
- 1 tsp vanilla extract or vanilla bean paste

Step by Step Instructions
- Make the base syrup
In a small saucepan over medium heat, combine sugar and water. Gently stir until the sugar dissolves and the mixture starts to simmer—about 5 minutes. - Toast the marshmallows
On a baking sheet, add a piece of parchment and place marshmallows on the baking sheet. Set your oven to broil, add the baking sheet to the oven. Broil in the oven until the tops are golden-brown and slightly charred. We need those slightly scorched tops – those are what give it that irresistible toasted flavor! CAREFUL: these won’t take long – like a minute, so watch them so that they aren’t too charred. - Add toasted marshmallows to syrup
Stir the toasted marshmallows into the hot syrup. Let them melt and dissolve for 2 to 3 minutes. You’ll notice the syrup turning amber-colored and smelling like your favorite, fluffy campfire treat. Simmer/Low Boil until all the bits are dissolved, just another few minutes. - Finish
Remove from heat and stir in the vanilla extract/vanilla paste. Let cool, then transfer to a glass jar with a tight lid. - Storage
Store in the fridge for up to one month—perfect for making your mornings sweet and cozy, all week long.

Notes
Helpful Tips:
- Use full-sized marshmallows—mini marshmallows contain more cornstarch and can result in a syrup that’s overly thick
- Don’t shy from the scorch—a bit of char adds depth without making it bitter. Balance is key!
- Adjust sweetness—if it’s too sweet, dilute with a little hot water. It still tastes amazing even with a touch less sugar
