How often are we looking for a super simple recipe to use during the week that will go with pretty much anything you want to have with it? This recipe could not be easier. Here are some ideas for ways to enjoy shredded beef:

Using Stew Beef
Stew beef can be found in the butcher section usually packed in 1lb or more packages. The best part about this cut of beef is that it is very inexpensive. You won’t want to use stew beef in recipes that call for shorter cooking time. It’s on the tougher side which means it’s best if cooked for a long time. We’re using the Instant Pot which makes it as tender as can be.
Easy Instant Pot Shredded Beef Recipe
Using the Instant Pot means this recipe comes together very quickly. Once your pressure cooker comes to temp, it’s ready in about an hour! BUT, it still has that all day cooked flavor. This recipe could be even easier if you wanted to use your favorite salsa, but I didn’t have any on hand. In the past, I’ve found when I use salsa, I don’t get the deep flavors I love when I use this particular recipe. But you know my advice is always “Do You, Boo.” If you want to use salsa, this could easily be a two ingredient recipe: beef and salsa.
Today, we’re going for the rich, full flavor that I love. I think you’ll love it, too!
Easy Instant Pot Shredded Beef

Ingredients
- 1 T Extra Virgin Olive Oil
- 1 1/2 lbs Stew Beef
- 1 tsp Granulated Garlic or Garlic Powder
- 1 tsp Onion Powder
- 1 tsp Dried Oregano
- 2 tsp Chili Powder
- 1 tsp Kosher Salt
- 1 tsp Black Pepper
- 1 tsp Smoked Paprika
- 1 tsp Cumin
- 1 cup Tomatoes, I used the fresh ones I had on hand, feel free to use a small can
- 1 Fresh Jalapeno, seeded, diced
- 1 clove Garlic
- 1 Juice of Lime
Instructions
- Set your Instant Pot to Saute - heat Olive Oil.
- Add stew beef to brown all sides.
- Cancel Saute function on Instant Pot.
- Add the rest of the ingredients to the pot.
- Set the Instant Pot to High Pressure for 40 minutes.
- Place the lid on the Instant Pot, making sure to set to Sealed.
- When the beef is done, let it natural release for 10 minutes, then carefully set the vent to venting to release the rest of the way.
- Perfect for Tacos, Nachos, Burritos, Burrito Bowls, Salads and Omelettes!
Notes
Store your shredded beef in a sealed container in the fridge for 3-4 days or in an airtight container in the freezer for up to 2 months.
