The Best Summer Salad
We are smack dab in the middle of Summer here in the Northeast and it is H-O-T HOT. The last thing I want to do this week is turn on the oven or eat something heavy.
This easy Italian Salad was the perfect combination of hearty, fresh, and light tasting and hit the spot!
We are huge charcuterie fans in my household and we usually have some kind of combination of meats and cheeses in the fridge. I decided that tossing it all together and making a salad was the perfect way to enjoy them.
What are the Ingredients in an Italian Salad?
Honestly, I’m not a rule follower when it comes to salads – if I have it and it sounds good to me, I toss it in.
I know that doesn’t work when you’re looking for some direction so for the sake of this post, I tried to reign in my salad-making-willy-nilly-ness 😉
We used easy ingredients and I even cheated and grabbed some items off the olive bar because it’s SO cost effective than buying ALL THE THINGS. Some ideas for you:
- Italian meats: Salami, Pepperoni, Prosciutto, Capicola, Sopressata, or Tasso Ham – we used salami and pepperoni
- Cheese: Mozzarella, Parmesan, Mozzarella, Provolone – we used the mozzarella balls off the olive bar
- Vegetables: Crunchy Lettuce (romaine, radicchio, green leaf, iceburg), Cucumbers, Pepperoncinis, Red Onion, Tomatoes, Sweet Peppers, Olives – the olive bar at our local grocery has great options!
- Dressing: Bottled or Homemade Italian Dressing: I made my own and included that recipe below
- Croutons
Can You Make Chopped Salad Ahead of Time?
Yes, absolutely! The only items I would add right before serving are the dressing, croutons, and Parmesan cheese if you’re using it.
This salad has a lot of hearty items in it, so you can make it up to a day head and it will keep very well!
How to Make Chopped Italian Salad
This salad comes together fairly quickly, so you’re just chopping up everything and then tossing it with the dressing, top it with Parmesan cheese and croutons and you’re ready to serve it up.

Ingredients
Salad Ingredients
- 1 Small Head Iceberg Lettuce, Washed and Chopped
- 1 Bunch Green Leaf Lettuce or Romaine, Washed and Chopped
- 1 small Red Onion, Sliced thinly
- 1 Medium Cucumber, Chopped
- 1 Medium Carrot, Chopped
- 8-10 Small Sweet Peppers, I used the stuffed peppers from the olive bar, but you can also use red bell peppers, chopped
- 10-15 Pitted Black Olives, Grab your favorites from the olive bar for ease!
- 1/4 Cup Sliced Pepperoncinis
- 10-20 Small Mozzarella Balls, You can also shred or cut up mozzarella slices
- 6 oz Sliced Hard Salami, Chopped
- 3 oz Pepperoni, Sliced, chopped
- 1/4 Cup Shredded Parmesan
- Croutons for topping
Dressing Ingredients
- 1/2 cup Extra Virgin Olive Oil
- 1/4 cup Red Wine Vinegar
- 2 tsp Honey
- 2 tsp Italian Seasoning
- 1/2 tsp Garlic Powder
- 1/2 tsp Onion Powder
- 1/2 tsp Paprika
- 1/4 tsp Celery Seeds
- 1/4 tsp Sea Salt
- 2 Tbsp Grated Parmesan Cheese
Instructions
Making the Salad Dressing
- In a small jar with lid, add all of the dressing ingredients and shake well. Set aside.
Making the Salad
- In a large bowl, add the lettuces, carrots, cucumber, carrots and peppers.
- Drizzle with salad dressing and toss to coat the veggies.
- To the salad add the meat, olives, pepperoncini, and mozzarella cheese. Toss.
- Top with Shredded Parmesan and Croutons.
- Serve in individual bowls.
