Since I decided to ditch dieting altogether, I’m discovering SO many new foods and recipes to enjoy. Things like eating fruit AND toast for breakfast were always “off limits” to me before.
When I think about how I restricted my eating for so long, I really am sad about it. There are so many wonderful foods to enjoy that diet culture tells us are off limits or that are not “healthy”.

In this post, I’m going to be singing the praises of a few of those items: Bananas, Blueberries, Cashew Butter, and Toast. Ah, beloved toast. Bread, you are the vessel of delivery for so many delicious tastes and textures.
Recipe Using Cashew Butter
Over the past year my love for cashew butter has grown immensely. If I can be quite honest, I never understood the appeal of nut butters in the past and was especially in awe of all of you peanut butter lovers, until only recently! I know, it’s weird, right?
Growing up, all of my friends loved peanut butter toast and I could take it or leave it. I was more of a savory breakfast gal. But of course, as we age our tastes change and certainly as we move away from diet culture, an entire world of possibilities opens up!

This simple recipe is very similar to Banana Blueberry French toast, but for those times when you’re in a hurry and looking for an easier version. Maybe you’re not a French Toast fan; I have friends that can’t have or don’t like dairy and/or eggs. This is a great option!

How to Make Caramelized Banana and Blueberry Toast with Cashew Butter
Let’s first talk about how amazing caramelizing bananas is, shall we? And it’s so easy to do!
- All you’re going to do is slice your bananas and then quickly hot sauté them to brown, just takes about 30 seconds per side. This brings a delicious nutty deep flavor to the bananas and you can do it while your toast is toasting!
- I also am using frozen Maine blueberries in this recipe. Just 30 seconds in the microwave and they are done. You can include the yummy blueberry juice that it creates or not, your choice!
- Finally we are going to drizzle some cashew butter on top and finish with a sprinkling of Trader Joe’s Super Seed and Ancient Grains Blend (find it at TJ’s or on Amazon below). You can also just put your cashew butter on the toast before the bananas.

Caramelized Banana and Blueberry Toast with Cashew Butter

Ingredients
- 2 slices Favorite Bread, Best to go with a hearty bread
- 1/2 large Banana, Sliced lengthwise into strips
- 1/4 cup Frozen Blueberries, Thawed in the microwave for 30-40 seconds
- 2 Tbsp Cashew Butter
- 1 tsp Super Seeds or Seeds of Choice, Chia, Hemp, Pumpkin or Sunflower would be great
- Optional: drizzle of honey
Instructions
- Heat a nonstick pan to medium high heat
- Place the strips of banana onto the hot pan and sear for just about 30 seconds each side; enough to brown a bit
- Insert bread into the toaster and toast
- When toast and banana are ready, lay the bananas on top of each slice of toast.
- Add thawed blueberries
- Drizzle with cashew butter
- Top with seeds
- Optional drizzle of honey
