Brussels Sprouts and Pomegranate Salad
A delicious salad with shredded Brussels sprouts, pomegranate seeds, sliced apples, pumpkin seeds, and Parmesan tossed with a Maple Vinaigrette dressing.
If you’re looking for some new ways to use raw Brussels sprouts, this is a perfect way! I’m not a fan of cooked Brussels because they do not agree with me, but I can eat them raw every single day – I love them! They are probably my favorite addition to any salad because I love the crunch.
How to Shred Brussels Sprouts
First off, I refuse to use a mandolin…for ANY vegetables. Those things scare me! So when I want shredded Brussels sprouts, I just slice them up! All you have to do is wash them whole, then cut off the bottoms, peel a few of the outer layers off, then just slice them up. If you’re a mandolin fan, go ahead and use that. Just be careful!
Fall Salad with Pomegranate Seeds and Apples
My favorite part of this salad is all of the Fall goodness in it! Perfectly tart and sweet pomegranate seeds and ripe honeycrisp apples. This is the season for both of these Fall/Winter fruits. The addition of pumpkins seeds gives it extra crunch!
How to Make Brussels Sprouts and Pomegranate Salad
This salad could not be easier – we’re just tossing everything together and finishing it off with some shaved Parmesan and the most amazing Maple Vinaigrette dressing that you can make with simple ingredients I bet you already have in your pantry and fridge! The Maple Vinaigrette Dressing complements this salad perfectly! I would venture to say that the dressing sends this right over the top and makes this the best Fall Brussels Sprout salad!
Brussels Sprouts and Pomegranate Salad
A delicious salad with shredded Brussels sprouts, pomegranate seeds, sliced apples, pumpkin seeds, and Parmesan tossed with a Maple Vinaigrette dressing.
Ingredients
Salad
- 1 lb Brussels Sprouts, Shredded, Sliced
- 1 small Honeycrisp Apple, Diced
- 3 T Pickled Shallots or Onion
- 4 T Pumpkin Seeds
- 4 T Pomegranate Seeds
- 1/4 cup Shaved Parmesan, or 2T Grated Parmesan
Dressing
- 1 T Dijon Mustard
- 2 T Apple Cider Vinegar
- 3 T Maple Syrup
- 1/8 tsp Salt
- 6 T Extra Virgin Olive Oil
Instructions
Make the Dressing
- In a medium sized bowl or jar, add all of the dressing ingredients and stir or shake until everything is incorporated. Don't be afraid to taste test because it is THAT amazing!
Make the Salad
- Mix all of the salad ingredients together (except Parm) in two bowls then toss with the dressing.
- Top the salads with Parmesan and ENJOY!
Notes
This salad would be delicious topped with grilled chicken, shrimp, or salmon!
