Cucumber Salad with Vinegar

Today I’m sharing with you one of my ALL time favorite salads: Asian Cucumber Salad. It’s made with just a few simple ingredients – in fact, there are only THREE: cucumbers, rice wine vinegar and soy sauce.

I mean. Does it get any easier than this??

The Best Asian Side Dish

Asian Cucumber Salad is my absolute favorite addition to ANY Asian meal that I make, but especially when I have rice. I love to top my rice with this delicious crunchy salad; it’s such a fresh addition.

I predict you’re going to love it as much as I do…and I’m going to go so far as to say you may even want it with all of your favorite Asian dishes just like me!

Asian Cucumber Salad

You may recall this salad making a guest appearance a few weeks ago when I posted my recipe for Chicken Karaage (Japanese Fried Chicken).

Don’t worry if you missed it, the beauty of the chicken may have overshadowed it.

But that’s the thing about this unassuming salad…it may look simple, but it is what takes any dish it guest stars in to a whole different level!

Ingredients in Asian Cucumber Salad

  • Cucumber – Any thin skinned cucumber like English, Persian; but feel free to use the regular ol’ cucumbers, even pickling cucumbers work great! If I use these, I usually peel them.
  • VinegarRice Vinegar, Apple Cider Vinegar or even White Vinegar will do
  • Soy Sauce

How to Make Asian Cucumber Salad

As I mentioned, this is the easiest side dish to make. You can make it ahead of time but it’s also just as delicious made right before you eat it.

  1. In a medium bowl, add the vinegar, soy sauce (and sugar if using); whisk together.
  2. Slice and or dice the cucumber and add to the bowl, tossing to incorporate the sauce.
  3. If making ahead, cover and chill.
  4. Ready to enjoy on it’s own or as an addition to your favorite Asian dish!

Ingredients

  • 1 large English Cucumber, I've found these are crunchier but this is just as delicious with a regular cucumber
  • 3 Tbsp Rice Wine Vinegar
  • 1 Tbsp Soy Sauce
  • Optional: If you like a bit more sweetness, you can add 1 tsp sugar.
  • Optional: top with sesame seeds

Instructions

  1. In a medium bowl, add the vinegar, soy sauce (and sugar if using); whisk together.
