Wild Rice with Sausage and Butternut Squash
Just a few simple ingredients to make my Sausage and Butternut Squash Recipe. A warm and comforting dinner with roasted butternut squash, seasoned sausage, wild rice and kale.
This is one of those meals that just came together with what I had on hand, but boy am I glad it did!
Easy Butternut Squash and Sausage Recipe
Just 4 ingredients! This sausage and butternut squash recipe could not be easier – while your squash is roasting, just cook up the rice. Dinner in less than an hour including prep time? I’m all over it! I take the easy route with peeled and cubed squash, but I also used boxed wild rice blend with all the seasonings.
How to Roast Butternut Squash
I told you this recipe is easy, so I took a short cut and bought already cubed butternut squash then cubed it a little more. I just set the oven to 400 while I’m dicing, then toss the squash with olive oil, salt & pepper. Bake for 20 minutes, toss, then bake about 15-20 more minutes.
What Kind of Sausage Should I Use?
For this recipe, I used a pork sausage seasoned with Montreal Steak Seasoning that we buy in Vermont. But you can use your favorite sausage here – let your creativity flow! It would be fantastic with Italian sausage, chicken sausage, smoked sausage, chorizo and even ground beef.
Do I Have to Use Kale?
Not at all! I love kale and had it on hand, so it felt really natural for me to chop it up and add it to the recipe. But feel free to omit it or add your favorite greens like spinach.
How to Make Wild Rice with Butternut Squash and Sausage
This recipe is so simple:
- Roast the squash
- Cook the rice
- Brown your sausage
- Toss it all together
- Stir in chopped kale

Wild Rice with Butternut Squash and Sausage

Ingredients
- 3 cups Butternut Squash, peeled and cubed
- 1 T Extra Virgin Olive Oil
- Salt and Pepper, to season
- 1 box Wild Rice, follow directions on box
- 1 lb Sausage or Ground Beef
- 2 cups Kale, chopped
Instructions
- Preheat oven to 400°
- Line a baking sheet with parchment paper
- On the baking sheet, toss butternut squash with olive oil, salt and pepper
- Bake the squash for 20 minutes, then toss. Bake for 15-20 more minutes; remove from oven and set aside
- While the squash is cooking, cook the rice according to the directions on the box, set aside
- In a large skillet, brown the sausage on medium high, breaking it up. Drain the meat if needed.
- Add the butternut squash to the skillet, tossing with sausage
- Add the rice and toss. Remove from heat.
- Stir in chopped kale and mix.
Notes
I like to add BBQ sauce to my bowl, and hubs likes to add soy sauce. It's delicious with or without adding anything!
