Super Easy Paleo Sausage Gravy – this is the recipe that will change your gravy game, friends! It’s not often you can claim a substitute recipe is better than the original – but this is it!
Wow. That’s about the only word I could use to describe this recipe.
You know how sometimes you venture out to try new recipes only to have them taste pretty much like well…poop? I’ve done this SO many times that I’ve lost count. The anticipation, the disappointment, the money spent only to toss out food that’s not tasty…
Imagine my surprise when I took one bite of this Paleo sausage gravy and could not believe how DELICIOUS it is!? I’m talking your-friends-and-family-would-NEVER-know that it does not have any flour or dairy in it! Y’all know by now that I don’t post anything that isn’t yummy. TRUST ME – you will want to make this asap. It’s one of the best sausage gravy recipes I’ve made, I’m not kidding.
Where’s the Flour and Milk??
We subbed regular all-purpose flour for almond flour and tapioca flour and instead of regular milk, used almond milk. Disclaimer: I am NOT a fan of almond milk in many recipes, so I was hesitant to try this. The recipes that work best for me when using almond milk are typically when I’m baking or making cold beverages like smoothies and iced coffee. I was SHOCKED that there was absolutely no difference in taste in this recipe. This is a gluten free gravy I can get behind.
What is Tapioca flour?
Tapioca flour is made from the starch extracted from root of the cassava plant. Many people with gluten-sensitivities find it works well with their di.gestive systems. It can be used as a thickener in sauces and in baking. There are not many nutrients in the flour, however because it is resistant to digestion, it has similar properties and health benefits to fiber. Some studies have found that the flour feeds the friendly bacteria in our gut, which can reduce inflammation and other harmful bacteria. Other studies have found that it can lower blood sugar, increase fullness, and improve glucose and insulin metabolism.
It’s important that you purchase properly processed tapioca flour as improper processing can be harmful. But not to worry – stick to tried-true-companies like Bob’s Red Mill, which is what I used.
PS: Tapioca flour is very inexpensive, a little goes a very long way! I purchased a (20oz) bag of Bob’s Red Mill Tapioca Flour for $2.99 at my local grocery store. No need to buy super expensive ingredients that you won’t use – you’ll use this!

You can also make Paleo Sausage Gravy with Cassava Flour. If you’re using cassava flour, the substitution for regular flour is 1:1. So if your recipe calls for 3T of all purpose flour, use 3T of cassava flour. I personally have not cooked with cassava flour in this recipe, so feel free to come back and let me know how it worked for you!
How to serve your Super Easy Paleo Sausage Gravy
An easy way to enjoy this sausage gravy is over scrambled eggs or with air fried potatoes, which is how I served it. See below because I’m giving you an extra recipe here, friends! These air fried potatoes were made with just 4 ingredients and were perfectly “fried” in just 20 minutes! If you haven’t had the opportunity to try air frying, you really should – I cannot believe how delicious all of the things I’ve made have been – FRIED food with just 1 or 2 T of oil! This is the one that I have and it was given to me by my mom – I didn’t even have the instructions but it’s so easy to use, I didn’t need them!
Can Paleo Gravy Be Reheated?
Yes! In fact, I was shocked at how delicious it was reheated; just as good as it was right off the skillet!
Super Easy Paleo Sausage Gravy

Ingredients
Air Fried Potatoes
- 2 Medium Sweet potato, peeled and cubed
- 3 Medium Yellow gold or Russet potatoes, washed and cubed
- 2 T Extra virgin olive oil
- 2 T Ranch, dried, in the packet
- Salt & Pepper, to taste
Paleo Sausage Gravy
- 1 lb Breakfast sausage
- 3 T Oil of choice, olive, coconut, avocado, etc.
- 1 T Almond flour
- 2 T Tapioca flour
- 2 cups Unsweetened milk, Almond, cashew, etc.
- Salt & Pepper, to taste
Instructions
Air Fried Potatoes
- In a large bowl, combine the potatoes and olive oil and toss to coat. Add the Ranch, salt & pepper and toss again.
- Place the ingredients in the basket of your air fryer, then close it up, set it to 400 degrees for 10-12 minutes
- Open the air fryer basket and toss the potatoes once then finish cooking for another 10-12 minutes.
Paleo Sausage Gravy
- In a large skillet, brown the sausage over medium high heat, remove when done and drain on a paper towel.
- I like to drain the leftover sausage oil and add the new oil at this point.
- When the oil is heated, using a whisk, stir in the almond flour and tapioca flour until the oil and flours are well mixed.
- While whisking, add the milk and heat through until beginning to thicken.
- Add your sausage back in and stir to combine. Remove from heat and serve over the sides of your choice!
- I added kale because I am trying to clean out our fridge! It added some really great texture and who doesn't love greens!?
