Make Your Own Caramels
These salted caramels couldn’t be easier to make. A few ingredients and just 30 minutes! You probably have the ingredients right now: butter, sugar, sweetened condensed milk, light corn syrup and a dusting of Maldon sea salt.
Salted Caramels Without a Thermometer
So many caramel and candy recipes require that pesky candy thermometer! I don’t know about you, but I don’t make a lot of candy throughout the year.
I’m not a fan of buying equipment that I rarely use, so I don’t have a candy thermometer. We’re using just our eyes and some elbow grease in this recipe!

It’s also a whole lot easier to make vs. other recipes that require cold cream, which adds the risk of crystallization and splashing/burns. We don’t want that!

How to Make Salted Caramel Candy
To make these caramels, melt butter and sugar in a medium saucepan, then add sweetened condensed milk and light corn syrup.
We bring it to a boil, then reduce heat to simmer while we stir, stir, stir until the creamy mixture develops a beautiful caramel color.
The last steps are to pour the mix into a parchment lined 8×8 pan, top with Maldon Sea Salt and cool.
After it cools (preferably for 2 hours, but believe me, I taste tested while it was still warm), just cut and serve, wrap or leave as is.

Salted Caramel Candy

Ingredients
- 1 1/2 sticks Butter
- 1/2 cup Granulated Sugar
- 3 Tbsp Light Corn Syrup
- 14 oz can Sweetened Condensed Milk
- 1 Tbsp Flaky Sea Salt
- Wax Paper, if wrapping.
Instructions
- Line an 8x8 pan with parchment paper, making sure it covers the pan, up and out the sides; this is how you'll remove the caramels easily.
- In a medium saucepan add butter and sugar. Heat over medium heat until butter melts and sugar dissolves. Stir occasionally.
- Add the corn syrup and sweetened condensed milk, stir. Raise heat to medium high and cook until the mixture begins to boil. This step may take about 5-8 minutes to bring to boil. Stir with whisk a few times to keep things going.
- Once boiling, reduce heat to medium. Mixture should still be simmering. Now you'll want to whisk pretty often. During this time, the caramel needs to cook long enough to turn that golden color of caramel. For me, this took about 15-20 minutes, whisking often.
- Of note, you may notice the butter try to separate, just whisk until it's incorporated again.
- You will notice towards the end that the caramel is beginning to pull away from the sides of the pan, this is good.
- Just keep whisking until you get the color of caramel you want.
- Once you're happy with it, remove from heat and pour into the parchment-lined pan.
- Sprinkle generously with flaky sea salt.
- Let cool for 1-2 hours.
- To cut, remove the caramels from the pan using the parchment paper to lift it out and place on a cutting board.
- You can spray your knife with some cooking spray to easily cut through the caramels but I didn't need to.
- Cut into squares or rectangles; whatever shape you'd like!
- Wrap with squares of wax paper.
Notes
It's important to note that getting the caramels to the perfect point of color and to the place that they will harden correctly takes a good bit of time.
When done, the mixture will reduce, and start to pull away from the saucepan easily and will peak when you whisk and remove the whisk. This takes about 30 minutes from start (step 1) to finish (pouring into pan) and could take more time.
The tell tale sign is the caramel-y color and the pulling away from the pan. It should almost have the consistency of frosting.
Please also note that the darker they get, the more nutty the flavor will be.
These caramels will last at room temperature for up to 2 weeks. For longer storage, keep in the fridge. I keep mine in the fridge until I'm ready to share; they come to room temp pretty quickly.
