I don’t know about you, but when I have ricotta for things like lasagna, I tend to have a little bit left over, so if this is the case with you, try mixing in some honey and cinnamon, it’s THAT easy, friends.
If you’re looking for a little something different to jazz up your breakfast, this is it.

How to Use Leftover Ricotta Cheese
It seems I always have a little bit of ricotta cheese leftover when I make a recipe that calls for it. So I was trying to come up with something to use up the last bit in the container.
The good news is that you can make a little or a lot. You can make it ahead of time, too! I’ve just been making it when I’m ready to have some, it’s THAT easy…and I may or may not have had it for 5 breakfasts in a row, no judgement here.
On this day, I topped an English muffin with the honey cinnamon ricotta and sliced some peaches I picked up at our local market.
I’ve made it with blueberries and waffles for the past 3 days and it is SO amazing. This would be just as delicious topped with fresh fruit and berries and eaten with a spoon.
What is Ricotta Cheese?
“Ricotta” translates to re-cooked; it’s cooked twice and is actually not technically a cheese but creamy curd. During the cooking process, the casein is removed which makes it a suitable dairy source for those with casein intolerance.
Ricotta is like the OG of cheese, dating back to the Bronze age where it was produced in Italy. Another of my favorite ways to use ricotta is in cooking and baking – try adding this creamy curd to your pancake mix and in ricotta cookies!
How to Make Honey Cinnamon Ricotta
This is the easiest recipe, friends. As I mentioned, you can whip it up while your English Muffins or Toast are toasting.
All you have to do is grab a small bowl (or even use the container if you’re using leftover ricotta!), mix in the cinnamon and honey and voila!

- 1/2 cup Ricotta cheese
- 1 T Honey
- 1/4 tsp Cinnamon
Instructions
- In a small bowl, mix all of the ingredients together.
- Top your pancakes, English muffins, toast, waffles and some fruit, or just enjoy it with a spoon!
