So, I’m a huge fan of green bean casserole at Thanksgiving, but it’s been quite a surprise to find out how many people aren’t…I mean…? I wouldn’t have even contemplated an option to NOT love it!? I’m not saying it’s weird, but…kidding 😉

So you’ve got company coming and want to impress them? This is your answer. FRIENDS: this is SO good and the toasty crumb topping is what sends this dish to a whole other level!
Can This Dish be Made Ahead of Time?
Yes, absolutely. I would hold off on adding the Parmesan topping though, to avoid it getting mushy. But feel free to make the veggies ahead of time, then all you have left to do is toast up the breadcrumbs and top them.
How to Cook Fresh Green Beans
There are a number of ways to cook fresh green beans, but honestly, my favorite way is to boil them in a broth to soften them up a bit.
I do like a tiny bit of a bite left in mine, but in my opinion, green beans are perfectly cooked when they’re just at the point of firm/beginning to soften.
You should be able to bite it and then enjoy the flavor without it being chewy. Boiling green beans in broth is the perfect way to attain this texture.
Can I Leave Out the White Wine?
Yes, there isn’t much wine in this dish but you’d prefer not to add it, just remove the shallots and mushrooms from the pan when they are done sautéing.

Green Beans and Mushrooms with Toasted Parmesan Breadcrumbs
The perfect holiday (or anytime!) side dish!
Ingredients
Veggies
- 6 Tbsp Butter, divided
- 2 medium Shallots, sliced
- 8 oz Mushrooms, sliced
- 1/4 cup Dry White Wine
- 2 lbs Green Beans, trimmed and washed
- 1/2 cup Chicken or Vegetable Broth
- Salt & Pepper
Breadcrumb Topping
- 2 Tbs Butter
- 1 clove Garlic, minced
- 1 cup Panko Breadcrumbs
- 3 Tbs Parmesan Cheese, grated
- Salt & Pepper
Instructions

- In a medium skillet, over med heat add 3Tbsp butter, when butter is melted, add shallots and saute until softened, about 6-8 minutes. Try not to let them get crispy.
- When shallots are cooked through, add the mushrooms and sauté until they begin to brown. Note: try not to keep moving the mushrooms; allow them to brown a bit before flipping them, this will give them a nice crust. When browned, add the white wine and cook off the alcohol for about 2 minutes. When liquid is almost gone, season with salt and pepper, then remove the mushrooms and shallots to a separate plate.
- In the same skillet, turn heat up a bit to med/high, add 3 Tbs butter to melt; when melted, add the green beans, toss with butter, then add broth. Simmer for about 8 minutes or until the green beans are cooked to your liking. If there is any liquid left, drain the green beans, season with salt & pepper, and set aside.
Topping
- In a small skillet, melt remaining 2Tbsp of butter and add the garlic cooking only for about 30 seconds. Add the Panko and stir to mix through - continue stirring until the breadcrumbs begin to brown.
- Stir in the Parmesan cheese and remove from heat.
- In a serving dish, lay the green beans, top them with the mushrooms and shallots, then top with breadcrumbs.
- Serve and Enjoy!
