What’s a Galette?
A galette is French and basically refers to a flat pastry; in this case it’s used as a crust for a pie.
What I love about a galette is that it doesn’t have to be perfect, it’s rustic and easy and it makes a really beautiful pastry in it’s imperfection!
Fresh Peaches Recipe
Is there anything better than fruits and veggies in Season?? I honestly think not.
Peaches are one of those fruits that are literally only good during their season. And I love it when peach season comes around.
Peach Pie Using Refrigerated Pie Crust
For this recipe, I had a premade pie crust that I didn’t know what to do with and we had just picked up some delicious peaches.
Do I Have to Peel the Peaches?
Nope. Sometimes I leave the peels on and sometimes I peel them. Whatever you decide will work in this recipe.
Can I Use Different Fruits?
Yes! Any stone fruit will work in this recipe: Cherries, Plums, Apricots, Nectaries or ANY combination of these.
How to Make Easy Peach Galette
This recipe could not be easier. The hardest part is really cutting the peaches. So, once you have that done, you’re well on your way to enjoying this delicious dessert.
First, preheat oven to 400.
Prepare your peaches and cut them. While you are doing this, take your pie crusts out of the fridge for about 30 minutes so that they are pliable.
Once pliable, place the pie crust on a baking sheet that has been lined with parchment paper. Gently pull the edges out a bit.
Next, to a large bowl, zest your lemon, add the cornstarch, lemon juice, salt, sugar, and vanilla. Whisk to incorporate.
Toss the sliced peaches in the juice, then spoon onto the pie crust, leaving about 3″ all around to fold.
Brush edges with cream and sprinkle with sugar.
Place in the oven then bake for 5 minutes. Reduce heat to 375 then cook until pie crust edges are brown.
Remove from the oven and let cool for about 20-30 minutes.
Serve with whipped cream or vanilla ice cream!

Easy Peach Galette
No fuss, Easy Peach Galette is made with premade pie crust and fresh, juicy Summer peaches. A perfect, delicious peach dessert!
Ingredients
- 1 premade pie crust, refrigerated or frozen.
- 2 tsp cornstarch
- 1 tsp grated lemon zest
- 1 tsp kosher salt
- ⅓ cup sugar
- 1 Tbsp fresh lemon juice
- 1 tsp vanilla extract
- 4-6 peaches, cut into thin wedges
- 1 Tbsp milk, half & half, or heavy cream
- 2 Tbsp course sugar or regular sugar for crust edge
Instructions
- Thaw frozen pie crust or if using refrigerated dough, remove from fridge for about 20-30 minutes prior to using.
- Preheat oven to 400
- Line a baking sheet with foil or parchment paper.
- Wash and cut peaches - I remove the skin, but that's a preference.
- In a large bowl, add the cornstarch, lemon zest, juice, salt, sugar, vanilla and whisk until cornstarch and sugar are incorporated.
- Add the peach slices and toss, set aside.
- Unroll the pie crust and place on the baking sheet.
- Gently stretch the dough a little bit.
- Using a slotted spoon, scoop the peach mixture into the middle of the pie dough, leaving about 3 inches around the outside. If you prefer a juicier pie filling, set the rest of the liquid aside until your crust is pulled over the peaches.
- Now, fold the pie edges up over the peaches, leaving the middle of the pie exposed.
- I like to fold, then fold the next section over, and so on.
- Using a pastry brush, brush the cream over the crust and then sprinkle with sugar.
- Place the galette into the oven and bake for 5 minutes.
- After 5 minutes, reduce heat to 375 and finish baking for 35-40 minutes or until the crust is browned.
- Remove from oven, and cool on a cooling rack for about 30 minutes.
- Enjoy warm with whipped cream or vanilla ice cream!
