Sometimes I like to mix things up, too! Not to deviate from the norm; just to add a little bit of something different.

How to Roast Carrots
Roasting carrots is super easy; just toss the carrots with olive oil and salt and pepper and roast them in your oven on a parchment lined baking sheet.
No fancy ingredients or equipment needed. If you’re looking for an even easier recipe, try roasting baby carrots using the same instructions!
Can Maple Butter Roasted Carrots Be Made Ahead of Time?
I would make this recipe towards the end of your cooking time, maybe even while the turkey is resting. Your oven will already be heated up and then you can just throw these in.
The reason I wouldn’t make them ahead is because I don’t think they’d sit well texture-wise.

How to Make Maple Butter Roasted Carrots
Maple Butter Roasted Carrots
My Maple Butter Roasted Carrots will shine on your Holiday table! They are slightly sweet and the perfect companion for your favorite main dish!
Ingredients
- 2 lbs Fresh Carrots, peeled and sliced lengthwise
- 1 Tbsp Extra Virgin Olive Oil
- Salt & Pepper
- 1 stick Salted Butter
- 2 Tbsp Maple Syrup
- 1 tsp Dried Rosemary
Instructions
- Preheat oven to 400
- Line a baking sheet with parchment paper and place the carrots, you can spread them out or not, no worry about being too fussy.
- Drizzle carrots with olive oil, and season with salt & pepper, then toss.
- Roast the carrots for 30-35 minutes and toss them halfway through roasting.
- When the carrots are almost done, heat butter in a small saucepan to melt and let it get to the point of almost browning (you can also go all the way to browned butter for an even more amazing flavor!). Remove from heat.
- Whisk in the maple syrup and rosemary until it's all incorporated.
- Remove the carrots from the oven and place in a baking dish or serving dish. Drizzle with maple butter and serve!
