I absolutely love cauliflower!  This cruciferous delight has gone viral with the keto craze, but I’ve been loving it since way back when and my love runs deep. 

This is my most favorite cauliflower recipe! And the reason? It’s a CAULIFLOWER recipe, not a cauliflower recipe pretending to be anything but. It’s not a substitution for anything!

If you haven’t ever roasted cauliflower, I beg you to try it.  Something magical happens in the oven when it’s roasting that creates a delicious, nutty flavor. 

I usually eat them right off the baking sheet.

I’m not even going to pretend that these mimic french fries. The thing is, they have their own delicious flavor and the crispy parmesan crust gives these their own category.

I’ve dunked these babies in ketchup, ranch dressing, buffalo sauce…the list goes on and each one is just as yummy as the next.  What’s your favorite dip of choice??

What to Serve With Roasted Cauliflower

I paired this recipe with my Caprese Chicken and it was the perfect side dish.  This would also pair well with any grilled meat or fish, or perfectly delicious on it’s own.

How to Roast Cauliflower

The secret to perfectly roasted cauliflower is a super hot oven and a generous amount of oil. Just add some salt, pepper, and in this case some grated Parmesan, and you’ve got yourself the perfect low carb side dish!

Roasted Garlic Parmesan Cauliflower Recipe

Yield: 4 servings
Prep Time: 5 minutes
Cook Time: 25 minutes
Total Time: 30 minutes

The perfect side dish to grilled meats, fish, or enjoy it as is!

Ingredients

  • 1 Large Head Cauliflower, roughly cut into florets
  • 2 T Extra virgin olive oil
  • 1 tsp Garlic Powder
  • 1/2 tsp Italian Seasoning
  • 1/3 cup, or more Grated Parmesan, this calls for the powdery stuff to get into all of the nooks and crannies!

Instructions

  1. Preheat oven to 425 degrees
  2. Line a baking sheet with parchment or foil
  3. In a large bowl, add cauliflower florets and olive oil.  Mix well to coat.
  4. Add the garlic powder and Italian seasoning
  5. Add the Parmesan cheese and toss to coat well
  6. Dump the entire contents of the bowl onto the baking sheet including all of the cheese that didn't stick.  Spread the cauliflower evenly onto the pan and bake for 12-13 minutes
  7. Toss at halfway mark then bake for the remaining time.
  8. Remove from the oven and try not to eat it all before your family gets any - or don't, I'm not here to judge.
